- 125 grams Butter
- 3 eggs
- 210 grams sour cream

Recipe's preparation
Preheat oven to 180°C. Lightly grease and line 25cm ring tin with baking paper.
2. Place sugar in the bowl and make caster sugar by milling it for 3 seconds on speed 10. Set aside.
- 3. Place butter into bowl and melt for 2 minutes on 60°C on speed 1.
- 4. Add caster sugar, brown sugar, bananas, eggs and sour cream. Mix for 5 seconds on speed 5.
- 5. Add self-raising flour and mix for 10 seconds on speed 5.
- 6. Pour mixture into cake tin. Bake for 40 minutes.

Such a delicious cake! I cut down the sugar, and used frozen bananas that I whipped in the thermomix as the first step- I thinit helps to keep bananas cakes really light. I added a handful of walnuts.. and I love the simplicity of all other ingredients.. will definitely be using this as my go-to banana cake recipe. Thanks!
I made this as a gluten free
I made this as a gluten free cake. I only used half the amount of sugar and that was sweet enough, I also just stirred in the banana at the last moment as we like to be able to taste it in chunks. Very nice and easy to make.

This is a lovely light cake
This is a lovely light cake that smells divine! It made a nice change from the w/w banana bread I normally make. I used 75g white sugar in the cake & swirled the brown sugar (I mixed it in the TM bowl with a bit of batter) on the top of the cake. I subbed yogurt & used 1 egg & 65g egg whites. It cooked up perfectly in a round cake tin. Thanks for the recipe

Hi Lozzamatitis. Have you tried the round tin yet? I see no reason why you couldn't cook it in a round tin. If you felt there was too much batter for a round tin, put the remaining batter into a small loaf tin. I often do this! Obviously reduce the cooking time for the small loaf tin if there is only a small quantity in it. Look forward to hearing how you go. Fiona

I make this cake quite often as it's so easy to make and we all love it. I use yoghurt when I don't have sour cream and it's just as good.
