Banana Coconut Cake
- 55 grams Coconut
- 90 grams Butter
- 90 grams raw sugar
- 100 grams SR flour
- 30 grams plain flour
- 1 level teaspoon bicarb soda
- 55 grams Milk
- 3 bananas
- 2 eggs
Coconut honey topping
- 30 grams Butter
- 60 grams honey
- 60 grams Shredded coconut

Recipe's preparation
Grease a 15cm x 25 cm loaf tin, line with baking paper
Toast coconut on baking tray in moderate oven for about 5 mins, cool
1. Place bananas in TM bowl and mash 3 sec speed 4, Set aside
2. Mill sugar 10 sec speed 4
3. Add butter to bowl and mix 1 min speed 6 scraping down side of bowl
4. Add eggs while blades are rotating at speed 3
5. Add all other cake ingredients and mix for 10 seconds reverse speed 3
6. Pour into prepared tin and bake in a slow oven for 30 minutes
7. Spread evenly with topping and bake for a further 30 minutes
8. Stand 5 minutes before turning on to wire rack to cool
Coconut honey topping
Place butter and honey in TM bowl and heat 2 minutes 60 degrees speed 2
Add shredded coconut and cook a further 5 minutes reverse speed 2
Spread on top of cake and return to oven

How long do u pop iced cake back in the oven for? And at what temp please?
I added a bit of coconut
I added a bit of coconut flour and didnt have enough desiccated coconut for the topping so used a bit of coconut flower nectar and topped with slivered almonds. Still in the oven so fingers crossed!

Just wanted you to know that I entered this cake in a baking comp we had at work for the biggest morning tea this morning and I won first place.
This cake is amazing i love it i have made a few times for friends so when i was asked to bake for the comp i thought "Banana and coconut cake would have to be a winner"

Not sure what you mean for the coconut in the cake mixture. Is it fesh coconut, coconut milk, dried shredded or desiccated coconut, or something else?
