  • 280 g dates, pitted
  • 110 g sugar/rapadura or brown
  • 370 g water

Step 2

  • 130 g rice flour, milled in the TMX
  • 40 g besan flour
  • 40 g potato flour
  • 1 tsp bicarb soda
  • 2 tsp GF baking powder
  • 1 tsp xanthan gum
  • 2 tsp mixed spice
  • 1 tsp ground cinnamon
  • 2 ripe bananas
  • 120 g Rice or almond milk
  • 2 eggs

Recipe's preparation

    Step 1
  1. Place dates into TM bowl and chop 5 seconds speed 7.  Add sugar & water and cook for 10 mins 100 oC speed 2, set aside to cool.

  2. In a dry TM Bowl Mill rice & chickpeas 2 mins speed 10, add all other dry ingredients and mix on speed 5 for 15 seconds,

    Add Dry ingredients plus Bananas, Milk & Eggs to cooled date mixture and mix on speed 6 until combined, 10 seconds.

    Pour into a baking paper lined loaf tin and bake at 170oC for 45 mins, then cover with foil and cook for a further 15 to 20 mins, or until firm to touch and a skewer comes out clean.  Cool in tin for 5 mins and then turn onto a rack.  Serve with Spread and maple syrup if liked.
