Banana, Date & Seed Loaf

Ingredients

  • 60g whole wheat kernels
  • 60g pitted dates
  • 60g mixed seeds (linseed & chia is what I used)
  • 180g Self Raising Flour
  • 1/2 tsp cinnamon
  • 120g caster sugar
  • 80g extra light olive oil
  • 1 egg
  • 30g water
  • 2 ripe bananas
  • 100g Milk

Recipe's preparation

  1. Pre-heat oven to 180C. Lightly grease a loaf tin.

    Place wheat kernels in TM bowl and mill for 1 minute on speed 9.
    Remove and set aside.

    Add dates and chop for 8-10 seconds on speed 7.

    Return milled wheat grains along with remaining ingredients to
    the bowl and mix for 30 seconds on speed 6.

    Pour mixture into a prepared loaf tin. Bake for approximately 
    1 hour depending on your oven.

    Allow to cool slightly before turning out onto wire rack.

    Serve warm or cald with butter or honey, great for breakfast
    or school lunchbox snacks.

    if I don't have whole wheat, could I just add 60g's more s/r flour?

    This was so tasty and moist. I used linseed and poppy seeds. The seeds gave it such a great texture and also increased the nutritional value of this treat. I would consider trying less sugar or substituting sugar with honey next time - just to see if how it would go.
