Banana Fruit Bread

  • 160g sultanas
  • 125g raisins
  • 125g currants
  • 250g cold black tea
  • 2 tbsp brandy, Optional
  • 100g Chopped walnuts
  • 2 ripe bananas
  • 220g brown sugar
  • 50g glace cherries
  • 1 egg
  • 2 tbsp Milk
  • 2 tbsp treacle, or golden syrup
  • 400g Self Raising Flour

Recipe's preparation

    Banana Fruit Bread
    1. Place  sultanas, raisins and currants in a large bowl with  tea and brandy. Cover and leave to soak for min 3 hours or overnight.
    2. Preheat the oven to 180°C. Grease a 1 litre loaf tin and line the base and sides with baking paper.
    3. Place walnuts in TM bowl and chop 3 sec / speed 5.
    4. Add bananas and chop 5 sec / speed 3.
    5. Add brown sugar, cherries, egg, milk, treacle (or golden syrup), flour and fruit and combine 30 sec / speed 4 / Reverse.  Scrape down and repeat if necessary.
    6. Bake 1 hour or until a skewer inserted in the centre comes out clean (cover loosely with foil if browning too quickly).
    7. Cool the cake in the tin for 10 mins then turn out onto a rack to cool completely.
    8. Slice and serve with butter.

     

    Keeps beautifully moist for a good few days - I like to warm a piece in the microwave for 20 seconds prior to eating!  tmrc_emoticons.)

Tip

 

You could use any sort of nuts to suit you. You could swap Cranberries for the Cherries if you wish. This recipe I converted from a "Delicious" recipe book.

    ah yes well spotted Carol!  The bananas "mashed" came up automatically in the ingredients (bit like auto correct)  I will go in and edit that i the ingredients.  You will see that in the method I say to mash in TM!  Thanks for picking that up.

    Why do you have to use mashed bananas...can't you cut them into 3 or 4 and mash in the TM? tmrc_emoticons.)
