Banana Muffins

  • 160 grams raw sugar
  • rind off half a medium lemon
  • 300 grams plain flour
  • 2 tsp baking powder
  • 240 grams cream
  • 1 tsp vanilla extract
  • 80 grams vegetable oil
  • 80 grams banana (medium)
  • 40 grams Shredded coconut
  • 2 eggs

Recipe's preparation

    Banana Muffins
  1. Preheat oven to 180C.

    Place sugar and rind in TM bowl and mill for 10 seconds on speed 9.

    Add all other ingredients in the order they are listed and mix for 10 seconds on speed 5 - use your spatula to help incorporate ingredients.

    Scrape down sides and mix for a further 5-10 seconds on speed 5.

    Spoon mixture into lined muffin tins and bake for 25-30 minutes.

Tip

You can use sour cream instead of cream.

Sprinkle a little extra shredded coconut on top of muffins before baking.

    Super nice and easy. I reduced sugar to 120 g, which I think is sweet enough. Also mixed my flours, I had some organic spelt which needed to be used. Thanks so much.

    Thank you. Turned out nice. I swapped the vege oil for coconut oil, used spelt flour and swapped out the sugar for rapadura. Made 12 big muffins.

    These are great for lunch boxes.  I made a few changes - 80g rapadura instead of sugar, wholemeal plain flour, macadamia oil instead of vegetable, and milk instead of cream.  Yum.  Thanks for the recipe.
