  • 190 grams roll oats
  • 1 teaspoons bicarbonate soda
  • 100 grams almonds
  • 1/2 teaspoon salt
  • 220 grams pitted dates
  • 20 grams Coconut sugar
  • 2 eggs
  • 80 grams olive oil
  • 3 small bananas or 2 large (approx 300grams)
  • 1.5 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat oven to 170 degrees Celsius. Place silicone moulds into muffin trays or grease muffin trays.

    2. Place oats into TM bowl and mill for 30sec/speed 10. Add in bicarb soda, salt and cinnamon and sift for 5sec/speed 5.

    3. Add in dates, chop for 10sec/speed 7, add almonds and chop  12sec/ speed 7. Empty flour into separate bowl and set aside. No need to clean TM bowl.

    4. Place sugar and eggs into TM bowl and mix 5sec/speed 5. Add in oil and mix 40sec/speed 6. Scrape bowl. 

    5. Break up bananas into a few pieces and place into bowl with vanilla. Mash 3sec/ speed 6.

    6. Pour flour mixture back into TM bowl with the wet ingredients. Mix 40 sec/Counter-clockwise operation/speed 5. Scrape bowl and repeat for 10 sec or until combined. 

    7. Spoon batter into prepared silicone moulds and bake 1 2 - 15 mins.  

    8. Put onto wire rack and let cool.

Tip

I find they are best kept in an airtight container in the fridge. They can also be frozen.

My batter stretches to about 20 muffins as I like them to be a small snack size muffin.

    Thank you so much for this recipe. I didn't worry about any sugar as I previously read the comments prior to starting. The kids love them and so do we! A new go to I think! I made a double batch and added sultanas to one batch for my hubby. 😋😋😋😋😋

    I made these this week and they turned out great. Nice and moist and still had a lovely texture after a few days being kept in an air tight container.

    We used egg replacer for a vegan option and worked out fine.

    These are my go to muffins. Fabulous healthy gf and df that freeze well and loved by everyone. I don't add the extra sugar and also mill dry ingredients and put into a bowl. Then mix wet ing and stir into the dry ones. Find i get a much lighter muffin this way without too much mixingin the thrermomix

    Yum! These were great! A real hit with my kids too. I only had 90g of oats so substituted the other 100g with wholemeal plain flour. I also used 60g of coconut oil instead of olive oil. They were really sweet so next time I won't add the 20g of sugar. Great recipe!

    Banana oatmeal and date muffins: I would give 10 stars if I could. Ticks all the boxes.

    Used half amount dates and rapadura sugar.Followed recipe exactly. Got 17 silicone muffin cups out.

    TIP 

    Instead of baking, STEAM IN VAROMA 22 minutes with 1 Litre water, using silicone muffin cups. May have to divide batch to fit all in.

    Yummo! I didn't add the Sugar, used Coconut Oil instead of Olive Oil, and added Mesquite powder, Maca Powder and Berry Powder for extra goodness).

    Prepared these delicious muffins in TM 31 and recipe worked well. I  omitted the sugar and only used 110g of dates to reduce calories and sugar! Absolutely yum! ☺

    These were great. Only used half the amount of dates as that's all I had and replaced the olive oil with coconut oil. Also found they needed cooking for about 20 minutes. Delicious!

    Next time I'll try to reduce the steps needed to make!

    I used half the amount of dates, coconut syrup instead of sugar and substituted the eggs. My egg substitute is 1 tablespoon of chia seeds soaked in 1/3 cup water for approx 15 mins. This eaquals one egg. Turned out great. Very moist.

    A great recipe, love the fact that all the ingredients make a flour mix. I added some dried cranberries and used a lemon cream cheese frosting. But they were just as delicious non iced.
