Banana, Pineapple and Macadamia Cake

Ingredients

Cake Mix

  • 485 grams raw sugar
  • 200 grams vegetable oil
  • 2 tsp vanilla extract
  • 3 eggs
  • 3 Large Ripe Bananas
  • 440g can crushed pineappe, in juice
  • 210 grams dessicated coconut
  • 100 grams macadamia nuts
  • 300 grams plain flour
  • 1 tsp ground cinnamon
  • 1 tsp bicarb soda

Recipe's preparation

    Method
  1. Pre-heat oven to 180 deg C (160 deg fan-forced).

    Line the base and sides of a 5cm deep square cake tin with baking paper.

    Make icing sugar: Add 125 g sugar to the bowl and mill 10 seconds speed 10. Set aside.

     

    Make castor sugar: Add remaining sugar to bowl and mill 3 seconds speed 10. Set aside.

    Add 120g desiccated coconut and mill 20 seconds speed 10. Set aside.

    Add macadamia nuts and turbo for half a second 2-3 times until nuts are roughly chopped. Set aside.

    Break bananas up into pieces and place into mixing bowl. Mash for 3 seconds speed 7.

    Add castor sugar and all other cake ingredients except nuts, icing sugar and reserved pineapple juice. Mix for 30 seconds speed 5.

    Add the chopped nuts and mix, Counter-clockwise operation, 10 seconds speed 4.

    Pour into prepared cake tin and bake in oven for 1 hour or until cooked when tested with a skewer in the centre. Stand for 10 minutes in pan then turn onto a wire rack to cool.

    Pineapple Glaze:

    Combine reserved icing sugar and enough of the reserved pineapple juice in a small bown to make a thin glaze. Drizzle glaze over the cake, slice and serve.

Tip

This mix will rise very well to you need to ensure you have a cake tin with a minimum height of 5cm. Taller if you can. If not, double line the sides of the tin to allow the cake to rise above the rim of the tin.

    Not the quick and easy recipe I was looking for but very yummy nevertheless!
    I used much less sugar and oil (and substituted the vegetable oil for grapeseed) and it was still moist and sweet.
    Thank you for a tasty recipe.
