- 150 g ripe bananas, peeled, broken into 4
- 250 g yoghurt or sour cream
- 130 g Rice Bran Oil
- 1 egg
- 100 g caster sugar
- 350 g Self Raising Flour
Recipe's preparation
Pre-heat oven to 160 (fan forced) or 180 (conventional)
Grease a 12 hole muffin tin
Add banana, yoghurt, oil and egg to TM bowl and mix 5 sec sp 5.
Add caster sugar and SR flour and combine 10 sec, sp 5. Check to see that all ingredients are combined. If not mixed well, gently fold with spatula.
Spoon into muffin holes. Bake 20 - 25 min or until skewer comes out cleanly. Stand in pan for 5 min, then cool on a wire rack.
Serve warm or cold.

Tip
My kids love these in their lunchboxes. You can add white choc chips when adding the dry ingredients.

I have the TM 31 and made 1.5 x the recipe and put them in my Texas muffin tins (larger than regular). They turned out great. I also used Sunflower oil instead of Rice oil, and reduced the sugar. No problems, they looked and tasted great!

Easy and delicious; had to use up yoghurt that was way out of date. I used half whole meal flour, reduced the sugar to 70g and added choc chips and blueberries

Great Recipe, wasnt sure if
Great Recipe, wasnt sure if my son would like them as he doesnt usually like fruit in muffins, so i added choc chips and he loved them! I made them for the second time today and both times I made a double batch, which only just fit in my TM5 and I had to give it a stir with the spatula to mix the top stuff in but both times it worked out great. This time i also decided to half the sugar and add some honey instead, so fingers crossed my son will still like them!

Delicious, simple recipe. Kids loved them too! I was worried that the mix was too dry but they turned out perfectly. Crunchy split tops (the way you want it to be) and lovely and moist in the centre.
