Beetroot Cake

  • 5 beetroot fresh, peeled and diced (approx 2 cups)
  • 800 grams water
  • 420 grams sugar raw
  • 300 grams vegetable oil
  • 4 eggs
  • 2 teaspoons vanilla
  • 380 grams plain flour
  • 40 grams cocoa
  • 2 teaspoons bicarb soda

Recipe's preparation

    Method
  1. Preheat oven to 180C. Grease and line cake tin.

    1. Put 800 grams water in bowl. Place peeled and diced beetroot in Varoma dish. Cook 25min/Varoma/Speed 3

    2. Allow beetroot to cool

    3. Transfer beetroot to bowl and mix 5sec/Speed 5

    4. Add to bowl, sugar, oil, vanilla and eggs. Mix for 10sec/Counter-clockwise operation/Speed 3

    5. Add plain flour, cocoa and bicarb soda. Mix 30sec/Counter-clockwise operation/Speed 4 until combined. Scrape down and mix a bit extra if needed.

    6. Bake in moderate oven 45-50 minutes or until skewer comes out clean.

    Delicious, moist, easy! Love this cake. I used two large beetroots (all I had), spelt flour instead of plain and 350g sugar. It worked perfectly. Made a small loaf-shaped cake and over ten cupcakes. The cake was more moist than the cupcakes so I will cook the cupcakes for a shorter period next time. Will be making this many more times.

    Cake turned out great and was enough mixture to make 12 cupcakes also. I did reduce the sugar to 250g and it was perfect. Thanks
