Berry, yogurt and oat muffins

Ingredients

30 portion(s)

Muffins

  • 225 g Wholemeal Self Raising Flour
  • 30 g rolled oats
  • 3 eggs
  • 170 g brown sugar
  • 200 g Yogurt, I use light greek yogurt
  • 65 g oil, eg canola or maccadamia
  • 120 g Frozen Berries, raspberries, blueberries or a mix

Recipe's preparation

    Mini Muffins
  1. preheat oven to 200 deg or 180 deg FF.

    grease muffin holes (6-8 large or 30 mini)

  2. place flour and oats into TM bowl 

    mix 5 sec / speed 2

  3. add eggs, yogurt, sugar and oil

    stir REVERSE / 10 sec / speed 4

  4. add berries

    stir gently REVERSE / 5-10 sec / sp 3

    until just combined

  5. spoon into muffin holes

    bake 25-30 min for large muffins

    bake 15-20 minutes for mini muffins

    until just browned and cooked through.

    cool 5 min in tin before turning out.

    These worked so well! I made a second batch replacing the berries with chocolate chips tmrc_emoticons.) . I found it made more than the recipe specified so perhaps have a spare tray ready in case you need it.

    Baked 04/09/20:

    Lovely muffins. Very tasty and kids loved them.

    Used:
    65g Coconut Oil
    100g Bown Sugar
    165g Frozen Blueberries
    75g Fresh Strawberries
    10g Vanilla Paste

    Baked at 170 degrees for 15mins, then 3mins, then 3mins.

    Made 20 Medium sized muffins

    Delish! I added 30g of chia seeds, vanilla, reduced the sugar to 100g and increased the berries to 200g. I wanted to freeze them, but they're all gone!

    Didn’t have my muffin tray so baked mixture in a loaf tin for 50 minutes. Turned out great! Added extra blueberries as had lots of fresh ones I needed to use. Used coconut oil and only 80 grams of sugar. My family and I almost polished off the entire loaf in one sitting- so yummy!!!

    These were delicious and so easy! Reduced brown sugar to 100gms, added a diced pink lady with the raspberries and sprinkled some oats on top before baking. Will definitely make again.

    First time making these muffins, used Rapadura sugar and dropped it down to 100g, used 200g of frozen blueberries as per comments. Used coconut oil. I didnt have yoghurt so used ricotta instead. Easy to make, moist and freeze really well! Thank you!

    These are a regular.  I didnt have any wholemeal SR flour last time so I actually just used200g white and topped up to 225g with my last bit of oat bran.  I always reduce our sugar to 110g & they are always sweet enough for us.  I also top up my berries to 200g cause... well...you know...  berries! tmrc_emoticons.-)

    Excellent recipe. I replaced 2tbsp flour with flax meal for a bit more fibre because had to use white flour. Also used hazelnut oil and reduced sugar to balance sweetness of oil. Used mix of blueberries and raspberries.

    Froze these and as went with mini muffins they thaw out quickly And taste nearly as good as fresh out of oven!

    Have made these twice now using dried fruit rather than frozen berries and they are easy to make, taste good and store well.  I reduced the sugar to 80 grams and added 1 teaspoon vanilla extract.  Thank you.

    Made these for breakfast today. I used 100g brown sugar instead and coconut oil as suggested by someone else. I didn't have self raising wholemeal flour so I added 2tsp baking powder to every cup (125g) of wholemeal flour and gave it a swirl to mix it up. I did this before I started step 1. Everyone enjoyed this. Will add grated carrots next time. Very filling as well with the oats in it.

    really easy recipe, only had strawberry yoghurt (Ski D'light), reduced the eggs to 2, reduced sugar (80g rapadura) and used coconut oil. Light and fluffy and almost a third of them got eaten before they even hit the cooling rack!

    I reduced sugar to 120grams and next time will reduce to 100g. 

     

    Next time I will add more berries, I did mix of fresh strawberries and frozen raspberries.

  • I make these regularly & they

    I make these regularly & they are very easy to adapt. 

    You can substitute any flour or replace a little of the flour with seeds (milled or whole).

    if making with GF flour you can sub the oats for quinoa flakes.

    when mixing the flour & oats you may need to increase speed to 3-4.

    I often reduce the sugar to 100g & even less with rapadurra.

    add a couple teaspoons of natural vanilla extract for sweetness.

    coconut oil tastes great! 

    If your raspberries are very big mix them NOt on reverse - this will chop them a little & blend them through better.

    These were brilliant! When I made them yesterday to share with some guests, Hubby said he thought our friends had bought them at the shop and brought them along - he didn't realise I had made them! Said they were so close to perfect, he thought they were from the bakery! tmrc_emoticons.;) Making another batch today with banana, walnuts and vanilla extract.
