The Best Ever Mud Cake

Ingredients

24 slice(s)

  • 250 g dark chocolate
  • 250 g Butter, room temp
  • 1 tablespoon instant coffee
  • 200 g water
  • 340 g plain flour
  • 30 g cocoa
  • 0.5 tsp Bi Carb Soda
  • 490 g sugar
  • 4 eggs, large
  • 2 tbsp EVOO (extra virgin olive oil)
  • 1 tsp vanilla extract
  • 150 g buttermilk
  • 1 heaped teaspoon baking powder

Ganache

  • 300 g dark chocolate, grated
  • 100 g Thickend cream

Recipe's preparation

  1.  Preheat oven to 150c Grease and line a deep 23cm round tin Place chocolate, butter, coffee, sugar and water in TM bowl 3 mins 30c speed 2 Add remaining ingredients (except eggs) mix 30 secs sp4-5.with blades running just below sp 3, add the eggs, mix for 1 min Scrap sides and then another 30secs sp 4 Pour mixture into prepared pan. Bake for about 1 hour and 30minutes. Insert a thin-bladed knife or wooden skewer into the centre of the cake to test whether it is cooked through. When cooked through, remove cake from oven, cover with a clean tea towel and allow to cool in the pan. When the cake has cooled to room temperature, remove it from the pan. The top surface of the cake will probably have a crunchy crust, which you may wish to trim off. We turn the cake upside down to give a flat surface for icing. Make ganache. Chocolate and cream in tm 2 mins 50c speed 3 Allow to cool before spreading ganache over cake then refrigerate.

    I have made this a few times as a while choc mud and it works perfectly! I switch out dark choc to white (caramilk would also work). Omit the coffee and add extra vanilla instead. I replace the cocoa with plain flour. I also always whizz up choc before melting at the start of cake recipe and do it higher temp (whether doing dark or white mud) or it doesn't melt properly.
    I've never used the ganache part of recipe.
    I've also used the Well and Good gluten free flour in this recipe and it has worked perfectly. I've used this for very tall buttercream cakes and it's great!

    Love this recipe! I converted it to be dairy free so used Lindt 70% dark chocolate blocks and put them in the thermie for 1 minute on sp5 to have fine shavings. I used nuttlex buttery instead of butter and instead of buttermilk - oat milk with lemon juice.

    It was a lot fluffier than the image, but tasted divine! It also only rose a little


    I then cut it in halve and added pitted Morello cherries as a compote. And then icing sugar with cocoa and cherry juice. Definitely a win!

    i make this cake often (with reduced sugar) but decided to substitute chocolate for caramilk, omitted the coffee and the cocoa. 3/4 batch was perfect fit for 20cm round tin and is one block of caramilk.

    will try a white choc mud next.

    Love love love this recipe! I made it as a birthday cake and it was such a hit! Everyone wanted more.

    I reduced the sugar by about 1/3 and halved the coffee as there were some little children eating it and it was still delicious.

    I made 1 x cake using a 23cm spring form tin + 24 mini cupcakes. The mini cupcakes only need 12-14 mins in the oven (just keep an eye on them and test with a skewer).

    Thanks to the tip from another user on here (sorry I can't remember who and can't find it now) - if you want a flat top that doesn't need trimming at all simply put a baking tray on the top of your 2/3 filled cake tin and the cake will rise up to it and flatten out and stay soft on top. So easy for icing!

    I baked this yesterday for my son's birthday, it came out beautifully. I was a bit worried about the top as at was quite dry and cracked but i sliced it off, placed the cake upside down, wrapped it overnight and iced it with the ganache today. Best mud cake I have ever tasted. My ganache was a bit runny but i left that in the fridge overnight and it was perfect today. Will be making this again and again.

I’ve followed the recipe and that part has always failed me (not the cake- just the ganache). Any tips? I’m grating it 1st before heating and it comes out bumpy- over cooked looking?

    Really is the best ever mudcake. Foolproof and always delicious, I make it for everyone's birthdays; a great cake.

    I only use 300-350g sugar. This cake also rises a lot so bear this in mind when filling the cake tin and allowing enough height between oven racks.

    Thank you for sharing!! I subbed with a GF flour mix of rice flour/tapioca/potato starch and xanthan gum and it was perfect. I used baking strips and a foil lid and I had a flat top with no crunchy bits. Like others my chocolate needed a higher temp and longer to melt but this recipe is a keeper. Smile

    Just baking now and I used a 23 cm springform pan. The cake mix has spilled over the sides and over the oven bottom. I am wondering why this happened? When I poured in the mix it was close to the top.

    I found it pretty straight forward and I am not a baker. Baking did take a little longer but isn't an issue.

    The only thing I changed was cut back the sugar to 350gms and I used an espresso shot as we don't do instant coffee here.

    I have made this 3 times now and has been a success each time even made it using GF flour also turned out great. The last one i made using Kahlua liquor and a double shot of esspresso coffee to make up the 200g liquid needed. The flavour was liked by all.
    I did wrap a thick wet tea towel around the cake tin too bake I found that this gave me a really flat top, and not so crusty

    I have made this cake a zillion times and it has NEVER failed me. I have substituted some of the water for liqueurs and they’ve got rave reviews. This Eeyore cake was probably 4 batches. It was huge!! It freezes beautifully and holds up brilliantly under fondant. Can’t thank you enough for this recipe!!

    My Aunty told me it was the best mud cake she has tasted so thank you for the recipe!! It was a fabulous Baptism cake!

    I only changed one thing and that was to use Cadbury Dairy Milk Chocolate rather than dark chocolate. I cooked for an extra 15 minutes also.
