Ingredients

Boiled Fruit Mix

  • 230 g Mixed fruit
  • 230 g orange juice, or water
  • 120 g Butter
  • 200 g brown sugar
  • 1 tablespoon coffee, instant
  • 1 tablespoon Drinking chocolate
  • 1 tablespoon golden syrup
  • 1 tablespoon marmalade jam
  • 1 teaspoon mixed spice
  • 1 teaspoon bicarb soda

Cooled Muffin Mix

  • 160 g plain four
  • 160 g SR flour
  • 2 eggs

Recipe's preparation

    Boiled Fruit Mix
  1. Place all ingredients in mixing bowl Counter-clockwise operation5 mins, 100 deg, speed 1.

    (mix needs to come to the boil and simmer for 1 minute)

    Set aside to cool completely.

  2. Cooled Muffin Mix
  3. Place flours and eggs into clean bowl and mix 15 secs, speed 4.

    Add cooled fruit mix and set Counter-clockwise operation10 secs, speed 4.

    Spoon into muffin cases and bake 180 degrees for 20 minutes.  Makes 18-20 muffins.

    (can also bake as cake but time will vary obviously)
