  • 250 gms butter at room temperature
  • 2 eggs
  • 220 gms SR flour
  • 170 gms brown sugar
  • 110 gms milk
  • 1 tbsn Golden Syrup

Recipe's preparation

  1. Grease
    and line a 23cm spring form tin with baking paper.





    Place
    all ingredients in the Thermomix bowl and combine on speed 5 for approximately
    30 seconds.





    Pour
    mixture into the prepared tin and bake in a pre-heated moderate oven for
    approximately 45 minutes or until cake springs back.





    Dust
    with icing sugar and serve warm (or cold!) with lightly whipped cream.

Tip

Due to the high butter content, butter will drip out the bottom of the spring form tin in the oven.  Place a tray underneath the tin to prevent butter burning on.

Adjust baking time if using a 26cm spring form tin.

    What an easy cake to make, and so yummy!

    Following others comments, I reduced the sugar to 130g. Next time I will try 140g to see the difference, but was happy enough with the 130g as I don't have an overly sweet tooth.

    I have a 20cm tin, so divided all ingredients by .79 to allow for conversion from 23cm tin to 20cm tin (but kept it at 2 eggs). Cooking time for the smaller tin was 40 mins.

    I had no whipped cream on hand, but did have a little vanilla icecream, so we had the cake served warm with the icecream. So delicious! It would pair well with a little caramel or butterscotch sauce (esp with the sugar reduced in the cake).

    Lovely easy cake recipe, quick for last minute dessert on a cold winters night. I reduced the sugar to 140g and it was fine, not overly sweet. I only had high grade flour, just added 2 teaspoons baking powder. Thanks for sharing!

    Gosh this was so buttery and decadent..... can't believe I whipped it up with pantry staples! I reduced sugar to 110gm but will probably make it again with about 130gm. Kids came back for seconds and thirds!

    I'm going to freeze for school lunches and I'd imagine it will still be nice and moist when defrosted due to the high butter content! Oh and I baked in a normal lined square pan and had no issues with dripping butter.

    I loved this recipe - thanks for sharing.

    I made this last night and it was a hit with everyone!  I made it ealier in the evening, then heated it up in the microwave and served it with cream.  This cake is so easy to make and so delicious - definitely a WINNER!
