Caramel Marshmallow Slice

Ingredients

Base

  • 125 grams Butter
  • 150 grams Self Raising Flour
  • 60 grams Coconut
  • 100 grams brown sugar
  • 2 tablespoons Extra Coconut

Caramel

  • 395 grams condensed milk
  • 60 grams Butter
  • 2 tablespoons golden syrup

Marshmallow

  • 110 grams caster sugar
  • 250 grams hot water
  • 1 tablespoon gelatine
  • 1 teaspoon vanilla

Recipe's preparation

    Base
  1. Preheat oven to 180°C

    Place butter in bowl melt 3 min / 60°C / speed 2

    Add the rest of the base ingredients 6 sec / speed 4

    Bake for 15 minutes or until golden

    Also toast the extra coconut at the same time. It will only take around 3 minutes to toast.

  2. Caramel
  3. In a clean bowl place all caramel ingredients cook 8 min / 90°C / speed 2

    If not thick enough put on for another 2 minutes.

    Spread over base.

  4. Marshmallow Topping
  5. Place sugar, gelatine and hot water into bowl cook 7 min / 100°C / speed 2

    Remove the lid and allow to cool to room temperature.

    Insert butterfly place basket on top of the lid and whip 3 min / speed 4

    Remove the basket and whip for another 3 min / speed 4 until mixture is thick

    Add vanilla and stir 15 sec / speed 4

    Spread over the caramel place in fridge until set around 30 minutes.

    I followed this recipe for the marshmallow side of things, when i placed it in the fridge to set it separated - there was a clear level at the bottom - what went wrong

    The flavour of this was beautiful but I couldn't give it 5 stars because the caramel was too runny, needed longer obviously and like another poster has said, the marshmallow was a flop.  Was a but frustrating because it ended up taking ages to correct.  If all these things could be improved then this recipe would be a 5 star for sure.  Was so yummy.

    Caramel needed longer & hotter .. I ended up cooking for about 12 mins on 100 oC

    1st attempt at marshmallow was a flop so started again ... I dissolved gelatine in 1/2 cup of cold water first. Place sugar & 1/2 cup of water in thermomix & cook for 8 mins 100 oC speed 2 then add gelatine solution for 5 mins 100 oC speed 2. 

    Allow to completely cool before inserting butterfly. I had to beat for about 15 mins on speed 4 to get desired consistency but got there in end.

    I was actually making this & wasnt sure how long & what temp to do the caramel, so looked it up in the community & there it was .. This is the best recipe ever ... Thanks for converting it for thermomix users  Love
