Caribbean Carrot Cake

Ingredients

Carrot cake

  • 300 g carrot, cut into pieces
  • 100 g Grapeseed Oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 370-380 g Canned Pineapple Pieces, weighed after draining
  • 100 g soft dark brown sugar
  • 220 g plain flour
  • 2 tsp bicarb soda
  • 1 tsp baking powder
  • 1 pinch salt
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground nutmeg, and cardamom
  • 1 tsp ground cardamom
  • 85 g Shredded coconut, (see Tips)

Icing

  • 200 g cream cheese
  • 50 g unsalted butter
  • 230 g icing sugar
  • 1 tsp vanilla extract
  • 100 g walnuts, to serve
  • Shredded coconut, (optional) to serve

Recipe's preparation

    Carrot cake
  1. Preheat oven to 175°C. Butter a large baking tin and set aside.

  2. Place carrot into mixing bowl and grate 5 sec/speed 6.  

  3. Add oil, eggs, vanilla, sugar, flour, bicarb, baking soda, cinnamon, ginger, nutmeg, cardamom and salt and mix 5 sec/speed 5.

  4. Add pineapple, coconut and nuts and mix 4 sec/speed 5.

  5. Pour into prepared tin and bake (175°C) for 45-60 minutes or until a skewer comes out clean. Clean and dry mixing bowl.

  6. Icing
  7. Place cream cheese, butter, icing sugar and vanilla into mixing bowl and mix 15-20 sec/speed 9.

  8. Spread icing onto completely cooled cake and garnish with coconut (optional) and walnuts to serve.

Tip

This is an updated version of the same recipe that appears in the EDC.

Shredded coconut can be substituted with dessicated coconut.

Walnuts can be substituted with pecans.

    Sue in the bay: I've wondered that too. I think you could safely use walnuts in the mix. Usually I buy a 140g bag and put half in the cake mix and the other half on top of the icing.

    StellaSwan: you've most likely worked out by now that is a different quantity of pineapple? For those that find it too gooey choose a larger tin. I always drain the pineapple the night before. My tin is 20cm X 20cm at 10cm high. This is a touch on the small side so I adjust the cooking time by 10 minutes extra. My best success is with 23cm square as it's a better size for this rich dense cake. Also for those wanting to cook it in a Bundt tin it cooks well but will not sit flat so i 3/4 fill mine and fill my muffin tray with what's left, I get 6 large muffins. I'm using fan forced and always preheat it very well. Happy mixin

    Very yummy cake. Remember to chop 100g of walnuts and set aside before the carrots. Add back when mixing everything together. Apart from that added everything as stated. All of my work friends loved it👍

    WOW WOW WOW ... I made this to put in the staff room last week on the first day of school and BAZINGA! Everyone loved it.

    I forgot to chop the walnuts up so I just threw them in, whole, during the last step (reverse 4) and it was all good - chunky but good.

    i found myself without a tin of pineapple at the time, late Saturday night because that's when everyone bakes, so I used a tin of fruit salad instead. Drained the juice off and threw it in. I also used olive oil instead of grape seed oil because that's what I had at the time.

    i also halved the amount of brown sugar, didn't have dark so used 'normal' brown sugar - did not notice any negative impact on the taste - I did ice it with cream cheese frosting so that's heaps sweet.

    for the tin, I used my 23 cm springform tin - this recipe makes a sizeable cake!

    definite current favourite cake!

    great recipe and full of flavour. I found that I only used 1//3 of the frosting, unless I wanted frosting 2 inches thick! Left over frosting freezes well, so will make this cake again, and frosting will be aleady done!

    I have made this cake numerous times now, it is very moist & is thoughly enjoyed by all, no need to pay a small fortune from a cake shop when you can bake it yourself, an excellent receipe, well worth trying next time you want to impress your visitors for afternoon tea!

    Made this recipe for my daughters 1 year old birthday, pureed ingredients and popped into cupcake patties.....used 1/2 tinned and 1/2 dried pineapple, was amazing! A big hit with babies, children and adults, also added a bag of white chocolate melts to the frosting

    I made this from the book, a complete doozy, it came out gooey and too moist and it sunk in the middle, very disappointing.  I'm glad I wasn't the only one though, what a waste, will try again, perhaps not bother with the pineapple, just stick to a carrot cake.  I might be a bit thick, but can't see any difference between this and the book recipe, could someone enlighten me as to the differences.  Cheers

    I agree Angelz. I made this today from the EDC cookbook and followed the instructions to the letter. What a flop -and waste of ingredients (not to mention time). I notice that the revised recipe online is considerably less wet than the recipe in the EDC cookbook. Surely Thermomix should ammend the cookbook given that I bought my TM in December 2012 and the recipe was ammended online in July 2011!!!! Very disappointed.

    Nice easy recipe, but 1tsp of cardamon is far too much - I used 1/2, and it was still a very dominant flavour. My pineapple only weighed 200g once drained, so I just made up the weight with chopped dates. You can also substitute pineapple juice for the oil, if you want to make a lower fat cake.

  • In the EDC the ingredients

    In the EDC the ingredients list starts with 100g walnut pieces, which are chopped for 1 second on speed 4 (if smaller pieces are desired) and then set aside to be added into the cake mixture. Please note that the recipe listed here online is an updated version of the one in the EDC and has had some ingredients significantly altered, as well as changed the method for making it. Am not sure if they just forgot to add the nuts in the ingredients list when they wrote up this recipe or if they forgot to take mention of the nuts in the cake mixture out of the method section. Either way, I think that you could easily leave them out or add them in without it affecting the results of the end product - it is all up to your personal preference! Hope this helps!

    Glad to find an updated version of this recipe from the EDC. Had made this this yesterday according to the EDC recipe and was very disappointed with the results - was so wet and oily inside despite being cooked properly (until the skewer came out clean and would spring back when touched). I can see two ingredients in particular that have been significantly altered! I am quiet suprised that this recipe has not been updated in the EDC, especially since it was changed online way back in July 2011 and I only just got my thermomix less than 2 months ago tmrc_emoticons.~  Am looking forward to retrying this recipe - hopefully with much better results!!!
