Cake Mixture
- 180 grams carrot
- 2 bananas
- 120 grams walnuts
- 90 grams brown sugar
- 3 eggs
- 2 tablespoons lemon juice
- 180 grams Butter, Melted
- 180 grams plain flour
- 2 teaspoons baking powder
- 1 pinch salt
- 1 teaspoon bicarbonate soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 70 grams Blueberries or Mixed fruit
Icing
- 160 grams Butter, Softened
- 250 grams cream cheese, Softened
- 2 teaspoons vanilla extract
- 125 grams icing sugar

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Preheat oven to 180'C.
Line and grease cake tin (I like to use a springform pan - it's so easy to remove the cake from the tin)
Chop carrots into 1inch pieces and pop into "Closed lid" . Grate the carrot 5 Sec/ Speed 5.
Add Bananas, mash together with Carrot 4 Sec/ Speed 4
Add Walnuts, Sugar, Eggs, Lemon Juice an Butter. Combine 10 Sec/ Speed 3.
Add Flour, Baking powder, Salt, Bicarbonate Soda, Cinnamon, Nutmeg, Blueberries or Mixed fruit. Mix together 2 Mins/ Speed 2 until combined.
Pour mixture into cake tin.
Bake cake for 1 hour 15 mins. Check cake fully cooked by testing that the skewer comes out clean.

Place all ingredients into "Closed lid" and combine 30 Secs/ Speed 5
