Carrot Cake with Almonds & Hazel Nuts

Cake

  • 100 grams almonds
  • 100 grams Hazelnuts Roasted
  • 300 grams carrots cut into pieces
  • 2 eggs
  • 160 grams olive oil
  • 220 grams raw sugar
  • 1 teaspoon mixed spice
  • 200 grams plain flour
  • 1 level teaspoon bicarb soda
  • 1 level teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 can crushed pineapple, drained (optional)

Frosting

  • 100 grams cream cheese
  • 220 grams icing sugar
  • 40 grams Butter

Recipe's preparation

    Cake
  1.  Pre heat oven 180 deg fan forced. Grease deep 25cm round cake pan.

    1.Place almonds and hazelnuts in bowl mill 4sec/sp9 and set aside.

    2.Place chopped carrot pieces in bowl chop 4sec/sp5 and set aside.

    3.Put eggs, sugar and oil in bowl mix 7sec/sp5, then add vanilla extract, mixed spice, flour, baking powder and bicarb soda and mix 12sec/sp5.

    4.Add hazelnuts, almonds and carrots mix reverse speed/20sec/sp2

    5. Add drained crushed pineapple(optional) mix reverse speed/10sec/sp2.

    Pour into prepared cake tin and bake for 1hr or until skewer comes out clean.

    Allow to cool in tin for half an hour before turning on to wire rack to cool completely before icing.

  3. 1.Add all ingredients to bowl and mix 30sec/sp6.

    Made it again, this time as a doubke batch and i was amazed how well it worked. It doesn't sink in the middle which my previous recipe did!
