CARROT, WALNUT AND FREEKEH CAKE

Ingredients

CAKE

  • 140 grams Freekeh
  • 170 grams carrots
  • 125 grams vegetable oil
  • 3 eggs
  • 180 grams raw sugar
  • 140 grams plain flour
  • 140 grams walnuts
  • 5 grams baking powder
  • 10 grams Milk
  • 1 heaped teaspoon mixed spices

LEMON CHEESE ICING

  • 25 grams raw sugar
  • 100 grams unsalted butter softened
  • 125 grams Philadelphia cream cheese
  • juice of 1/2 lemon
  • walnuts chopped

Recipe's preparation

  1. Mill Freekeh for 1 min / speed 9. Set aside.

    Place carrots in TM and chop 3 sec/ speed 6.

    Add all other ingredients and mix 15 sec / speed 5

    Place batter in lined tin. Bake for 60mins at 190 C.

    Decorate top of cake with Lemon cheese icing and walnuts.

    Cut into slices and serve.

    ICING

    Mill sugar 10 sec/ speed 9

    Add softened butter and cream cheese. Mix 20 sec / speed 5.

    Add lemon juice and mix further 15 sec / speed 4.

    I really liked this recipe - thank you! The cake was a little gritty in texture but not in a bad way. I only had 110g of freekeh so added an extra 30g of plain flour. I cooked it in a ring pan and I think it took about 35-40 mins to bake in a fan forced oven at 170 deg. I used an old favourite cream cheese icing recipe but it probably wasn't much different to this one.
