Choc Mint Slice - I Quit Sugar

Ingredients

BASE

  • 260 grams almond meal
  • 30 grams Cacao powder raw
  • 30 grams Arrowroot
  • 2 teaspoons baking powder
  • 3 eggs
  • 90 grams Rice malt syrup
  • 60 grams water

MINT FILLING

  • 240 grams Dessicated or shredded coconut
  • 30 grams Boiling water
  • 1 tablespoon Peppermint Extract
  • 80 grams coconut oil

GANACHE TOPPING

  • 100 grams Dark (85%) chocolate

Recipe's preparation

    BASE :
  1. Preheat the Oven to 180c and line a 20cm baking tin with baking paper.

  2. Add all base ingredients into mixing bowl and mix for 10 secs/speed 4.

    If needed mix for another 5 sec/speed 4.reparation steps of your recipe

  3.  Pour batter into lined tin and bake in oven for 15-20 mins or until cooked. Set aside to cool on a rack. 

    *Tip* Keep the baking paper in the tray as you can resuse it.

  4. MINT FILLING :
  5. Boil kettle

  6. Add coconut oil to mixing bowl, melt on 30 sec/50c/speed 2 (if you oil is liquid you may need less time)

  7. Add coconut, boiled water and peppermint to mixing bowl and mix 10 sec/speed 56. 

    Scrape down sides with spatula and if needed give another 10 secs/speed 5

  8. Place cooled base back into lined tin and pour the mint filling on top. You need to press down firmly.

    Put in fridge for 30 mins or freeze for 10 mins.

  9. GANACHE TOPPING :
  10. Add chocolate to mixing bowl and grate for 10 sec/speed 8. 

     

  11. Add cream and combine for 2min/50c/speed 3

    Allow to cool slightly to thicken.Pour over the mint filling and put back in fridge until set.

    Cut into squares and enjoy !!

Tip

Keep the baking paper in the baking tray so after the base cools you can put it back in and then pour the mint filling on top.

    I made this. I found it was very high so would try a lamington tray next time. Quite nice for sugar free. I didn't win my family over with this, but they are sugar addicts.
