  • 60 grams unsalted butter
  • 50 grams raw sugar
  • 60 grams brown sugar
  • 1 egg
  • 2 tsp vanilla essence
  • 110 grams plain flour
  • 45 grams Self Raising Flour
  • 1/2 tsp bicarb soda
  • 1/2 tsp salt
  • 1 tsp instant coffee
  • 1 tbsp Milk
  • 110 grams oat mix, (try rolled oats, spelt oats, quinoa flakes)
  • 90 grams dark choc chips
  • 80 grams Milk choc chips

Recipe's preparation

  1. Pre-heat oven to 190 C.  Line a tray with baking paper or a silicon mat.

     

  2. To the bowl, add butter and sugars.  Mix 30sec / speed 4.

     

  3. Scrape down sides of bowl if required.  Add egg and vanilla essense.  Mix 30sec / speed 4.

     

  4. Add flours, bicarb soda, salt, coffee, milk, oat mix and chocolate chips.  Mix 60sec / speed Dough mode"Dough mode" .

     

  5. Divide dough into 8 balls and lightly flatten to 2cm high discs.  Bake for 10 minutes for soft, chewy cookies or add a couple of minutes for firmer cookies.

     

  6. Allow cookies to rest for 5 minutes on tray before placing on a cooling rack to cool.  

     

Tip

Enjoy dunked in milk or a cup of tea!

    Really tasty. I accidentally put in a 1/2 tsp of baking powder as well and they worked out fine 😁. Coked for 14/16 mins in my oven. Thanks for posting. Best to put the knead on reverse as it broke up the oats and dried fruit.

    These were totally THE BOMB!I used Quinoa Flakes & omitted the coffee (only because I didnt have any instant) and did 1/2 milk choc chuncks & 1/2 currants.  They were seriously good! Thankyou!

    Yum! These are great. I added the coffee and it added a nice flavour to it. Quick and easy to make. The BF loved them (I thought he might turn his nose up with them having oats in them) Will make again.

    Yum! These are so good! Thanks for sharing the recipe, I'll be making them again.  I doubled the recipe after reading they only make 8 and ended up making 32 from a double batch and they were still big! Kids gave them a thumbs up too (I didn't add the coffee) thanks again!  tmrc_emoticons.)
