  • 240 grams plain flour
  • 60 grams cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 180 grams dark brown sugar
  • 120 grams Butter
  • 1 teaspoon vanilla essence
  • 1 teaspoon instant coffee
  • 3 eggs
  • 350 grams zucchini
  • 150 grams dark chocolate chips or pieces

Recipe's preparation

  1. Chop zucchini into large chunks and place in bowl.  Grate on Speed 7 for 5 seconds.  Set aside.

  2. Add sugar and butter to bowl and cream on Speed 4 for 30 seconds.

  3. Add vanilla, coffee and eggs, mix 5 seconds on speed 4 after adding each egg.

  4. Add flour, cocoa, baking soda, baking powder and salt.  Mix until just combined on Speed 4 for approx 10 seconds.

  5. Stir through zucchini and choc chips using the spatula being careful not to overwork.

  6. Pour mixture into prepared pan and level surface.  Bake for 40 minutes.  Dust with icing sugar to serve.

    I had some patty pan squash to use up so substituted this for the zucchini. Also wanted to reduce the sugar, so tried 65g Radadura to 80g dark brown sugar.

    Made them into cupcakes and cooked for 25min as per previous comments.

    So delicious, & moist & yum!! I found it wasnt cooked through in the middle after 40mins, so put in for another 8mins & this ended up being too much. Still lovely!

    I will be making this one again!!

    I made this today as 16 cupcakes and they took 25 mins to cook. . I followed the recipe as stated but next time I think I will try reducing the sugar and choc chips  tmrc_emoticons.)

    I made a version of this recipe using white wings GF flour & ommitted the coffee.  Also replaced sugar with 50G coconut sugar & 50G natvia & used milk chocolate instead of dark chocolate & 30G cacao instead of cocoa...perfect amount of sweetness & a really light, fluffy cake.  The whole family loved it.  Baked it on 180 - recipe doesnt state temp of oven.

    I was in a rush so failed to remove the zucchini, it was processed all the way through. Oops. Made half quantity with 2 eggs, and used mini cupcake tin. Turned out beautifully! Baked in about 12 minutes at 180C
