- 400 g chocolate, dark, milk or white
- 200 g Butter
- 200 g sugar
- few drops Food colouring, optional

If using raw sugar or castor sugar, mill to icing sugar, 10 seconds speed 10. Set aside.
Break chocolate into pieces and place in TM bowl. Chop 7 seconds speed 7.
Melt for 5 minutes at 50C speed 2 or until all melted. You may need to scrape down the sides halfway through. If you don't have 2 bowls, set chocolate aside.
Insert butterfly. Cream butter and sugar 20 seconds speed 4.
Pour melted chocolate into bowl and mix for 10-20 seconds on speed 3-4. You may need to scrape down the sides halfway through. If using white chocolate and adding colouring, add colouring at this stage and mix 5-10 seconds on speed 4 to achieve even spread of colour.
This icing is perfect for piping or spreading onto a cake with a spatula. The icing sets quite hard at cooler temperatures and can be used as an alternative to ganache when decorating cakes.

I followed the directions exactly in my TM5 and...
I followed the directions exactly in my TM5 and the frosting came out quite liquid and grainy from the sugar. The butter was even at room temperature! I think if you did turbo instead of 10 for the sugar it'd work better.

LOVE this recipe. This is my go to recipe for cakes and cupcakes as it sets so well for cakes that will be left out for a while. Sit it in the fridge once iced and then take out when to use and its just delicious. The flavours of the buttercream with mudcakes is just devine. Thank you for the recipe.

This was a massive fail for
This was a massive fail for me. To begin with the butter and sugar didn't cream. Not sure if I should have softened the butter as there was no mention in the method. Finally added heat and it creamed. Unfortunately when I added the choc and mixed it looked curdled. Tasted ok but wasn't keen to use it the way it looked.

The best ever icing. I have TM5 so adjusted the whipping time slightly (been caught out before) and added some vanilla paste. Only made only half the recipe And have heaps left over. Awesome thanks for the share.
