Chocolate Coconut Slice - Gluten Free

Ingredients

1 slice(s)

Slice

  • 125 grams Butter
  • 1 --- egg
  • 1 tsp vanilla essence
  • 80 grams Gluten free self raising flour
  • 70 grams Gluten free plain flour
  • 160 grams brown sugar
  • 20 grams cocoa
  • 85 grams Coconut

Icing

  • 120 grams icing sugar
  • 20 grams cocoa
  • 20 grams hot water, you may require more
  • 5 grams Butter, preferably at room temperature

Recipe's preparation

    Slice
  1. Heat oven to 180degrees.


     


    Melt butter at 60 degrees, speed 2 for 2minutes 30seconds.


     


    Add egg, vanilla, gluten free flours, sugar, cocoa and coconut. Mix on speed 4 for 10 seconds.


     


    Place in a greased slice tray and cook for 20 minutes.


     

  2. Icing


    Add icing sugar and cocoa to TM bowl, mix on speed 4 for 5 seconds.


     


    Add butter and hot water and mix on speed 4 for 10 seconds or until ingredients are well combined. Sometimes you may need to add additional water.

Tip

This is an old recipe used by my mother for years which I have tweaked a little and changed to gluten free. I find it keeps for quite a while in the fridge and freezes well.

    Thank you for a great recipe! So easy and delicious. It will become a regular in our household for school lunches. I used 120g brown sugar and it's plenty sweet enough.

    Tastes yum. I was surprised when it came out quite thick. I had to use my hands to push it into the pan. My pan measures 30x20x3cm. Once cooked it is very thin, about 1.5cm thick. Is your pan very different measurements to mine? What did I do wrong?

    This would have to be the best gf Chocolate Slice I've ever made!  I reduced the brown sugar to about 100g and it wasn't falling apart like a lot of gf sweets tend to do.  Moist and delicious Big Smile Its no a staple in our house and always some in the freezer.

    Super yummy and esy too. I used coconut oil instead of butter to make it dairy free. I doubled the batch and used 60g less sugar. Still super sweet but was worried about putting less sugar in because of another commenter that used half sugar and the result was crumbly. It was very moist and fudgy, just the way I like slice! Didn't need the icing, sweet and yummy enough without. I froze for lunch before we could eat it all!
