Chocolate Dipped Shortbread Dreams

Ingredients

  • 100g raw sugar
  • 250g butter
  • 225g bakers flour
  • 20g cornflour

200g dark chocolate

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Shortbread
  1. Place Sugar in TM bowl and mill 30 seconds speed 9.

    Set aside'

     

    Place cubed butter in TM bowl and blend 1 minute/ speed 5

     

    Add sugar and  continue to  blend 20 sec / Speed 5

     

    Place butterfly in TM bowl and cream 3 minutes / speed 4. Remove butterfly.

     

    Add sifted flour and cornflour. knead Dough mode20 seconds/ scrape downdown and  knead Dough modefor 10 seconds

     

    Place mixture in piping bag fitted with 11 mm star nozzle

    Pipe 4 cm strips on  baking tray lined with baking paper.

     

    Place in freezer on trays while oven heats up to 165 Degrees C

    Bake 20 minutes until slightly golden

    Cool on tray.

  2. Biscuits Piped on tray from the freezer.

  3. Biscuits dipped in tempered chocolate setting on tray

  4. Tempered Chocolate
  5. Pulse the chocolate on Turbo for 5-6 seconds.

     

    Take out about 50g of chocolate and put to one side.

     

    Heat the remaining chocolate on 50 degrees, speed 2 for 4 minutes

    ,

    Add the reserved chocolate and mix on speed 2 for 3 minutes. no temperature. This will take it down to about 28-29 degrees, and the chocolate might look like it’s starting to lump.

     

    Heat at 37 degrees for 40 seconds on speed 3. This will take the chocolate up to about 32-33 degrees. Now you have tempered chocolate.

     

    Dip cooled shortbread dreams in tempered chocolate. Leave to set on baking paper in cool place.

Tip

To clean TM bowl , pour a glass of milk mix speed 8 /10 seconds. Then for a hot chocolate  2 minutes / 60 Degrees/ Speed 2

    They are better and crunchier if they have browned a bit though I found.
    it made about 40 altogether and are very addictive!!

    Mine kept two weeks  -by then I had eaten them all - the butter content  causes them not to keep for alot longer. Although they can be frozen before dipping in chocolate and OK in freezer for 4 months.
