If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat oven to 150 degrees (fan forced).
Add water, sugar, bi carb, butter and cocoa to the Thermomix bowl.
Turn on for 3 minutes and 30 seconds, 80 degrees, speed 2.
Leave it to cool until under 50 degrees.
Add eggs, turn on to speed 4 for 4 seconds.
Add flour and combine on speed 3 for 45 seconds.
Pour into 200mm lined tin and bake for 35-45 minutes depending on the oven, or until skewer comes out clean. If a few crumbs come out, that's perfect. - Add chocolate to bowl and grate on speed 9 for 10 seconds. Scrape sides.
Add cream and turn on to 50 degrees for 5 minutes, speed 2 or until silky and smooth. You may need to stop and scrape to bowl to ensure contents melt evenly. - Once cake has cooled completely you can spread Ganache over cake and decorate. The photo is actually two cakes, sandwiched with Ganache and jam then covered in more Ganache and strawberries!

Absolutely delicious! My son wanted a layered rainbow cake so I doubled the recipe, removed the cocoa (sub with more flour), and added 1Tbsp vanilla per 1x recipe. Was so lovely and moist, even after a couple of days! Decorated with Swiss meringue buttercream.

After reading all the comments I had to give it a go. I did a straight swap for GF Flour and it came out perfectly. The amount of ganache was halved and was perfect. The cake is beautifully soft, fluffy and moist.

Yes, she posted vanilla conversions on a FB page a while back. I'm making it now! It's more of a dense type vanilla like the woolies mud cake. I've not done the version with chocolate. I just do the plain vanilla with vanilla bean paste.
Can I make a vanilla/white chocolate version?
For sure. Take out the cocoa, increase the flour to 215gm and add in 1tbs vanilla extract. For white chocolate, I mill a block of white chocolate (break into pieces and mill speed 9 for 10 seconds) prior to starting and add in with the flour at the last step. I also add 1 tsp vanilla extract to the white chocolate version.

Seriously good! So easy! Absolute winner! I made 2 cakes (cut the sugar back to 200g per cake and I used cacao) and 1 batch of ganache. Halved each cake and spread with raspberry jam and then ganach and repeat! Pour remaining ganache over the cake! I will definitely make this cake again! 💕🧑🏼🍳💕

Not as "muddy" as traditional mud cakes, but more than a simple chocolate cake.
Doubled recipe in TM5 (increased times by about 1/3) with no issues. Used a chocolate buttercream as it was for a children's birthday cake. Loved by everyone!

This turned out beautifully. I made two cakes, semi froze them to make trimming the edges easier and sandwiched together with ganache and quality raspberry jam. As per other comments, one quantity of the ganache was plenty for covering the two cakes

Easiest cake you will make. I'm not a big baker becasue it's all a bit of a pain in the ass but I made the effort for my wife's birthday. Hoesntly, the easiest cake ever and days later it's still moist and tastes great. I doubled it to make two layers. Whipped cream with vanilla and straberry jam in between the layers. More whipped cream with vanilla on the outside. That was a little bit teadious but mainly because my 2yo daughter kept sticking her finger in the side of the cake while I was icing it with the cream. I found cream heaps easier to work with than butter cream icing and worked well with the richness of the cake. I made up slabs of rocky road and cut it up to make the shards.

I’ve made this cake a number of times now - always when I’m short on time as it’s so quick (except for waiting for the mixture to drop below 50 degrees before you add the eggs! 😩) and easy. To save a bit of time, I now wrap the Thermie bowl in a big flexible ice pack to speed up the process! 😅
Even with a cut in sugar (I only use 180gm), this cake is divine!
I also cut the ganache ingredients in half as I don’t layer the cake, therefore only need enough ganache for the top....half is perfect and I still have ganache left over.

I wish that I never saw this recipe on a Facebook thread... then I never would have tried it.... but I did try it.. and now I’m addicted 😜😜. It is so moist & delicious. Just a good old fashioned choc cake like mum used to make when I was a kid. I’m sitting down eating some now as I type this review 😌😌. I feel like I’m going to put on 5kg in no time as I will want to keep making this... the only gripe I have is the time it takes for my thermie to drop to under 50 before I can move to step 2. It’s definitely worth the wait though.
