Chocolate Quinoa Cake

Ingredients

Cake

  • 270 g Cooked Quinoa
  • 80 g Milk
  • 4 eggs
  • 1 teaspoon vanilla
  • 120 g Butter
  • 300 g caster sugar
  • 100 g unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt

Frosting

  • 2 heavy cream, Cups
  • 150 g Semi-Sweet or Dark Chocolate Chips

Recipe's preparation

    Cake
  1. Pre heat oven to 180 degrees.


    Grease & line bottoms of 2 round cake pans or a 9x13 pan. DO NOT skip lining the bases of pan.


    Place butter in Tm Bowl.


    Melt butter 3mins/ spd1/ 50degrees


    Add eggs, milk & vanilla, mix spd4/ 10secs


    Add quinoa & puree 1min/ spd8 stopping & scraping down sides about 2-3 times throughout. Make sure quinoa is completely pureed, you should not see any little beads of quinoa.


    Add dry ingredients & mix spd 4/ 10secs.


    Pour ingredients into pans & bake in centre of oven for 28-30 mins until a toothpick inserted comes out clean.


    Remove from oven & let cool for 10mins before removing from pan to wire rack. Remove paper to cool completely.


     


    Frosting


    Place chocolate into Tm bowl & grate 30 secs/ spd 8


    Add cream & cook 2mins/ spd 5/ 50degrees


    Allow to cool completely 


    Insert butterfly & whip spd4 20 secs or unitl soft peaks form. Watch closely don't want to over whip.


    Place frosting between 2 layers of cake & frost top. Can put around the sides if you like.


    Chill for 2-3 hours before serving.
