Chocolate Zucchini Bread (Gluten Free)

Batter

  • 1 medium zucchini
  • 2 eggs
  • 50 g Coconut Oil or Melted Butter
  • 80-100 g Rapadura or Raw Sugar
  • 1 tsp vanilla extract
  • 20 g Raw cocao powder
  • 50 g Coconut Flour
  • 70 g Plain Gluten Free Flour (Orgran brand is best)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 pinch salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 170 degrees and prepare loaf tin, lightly greased and lined with baking paper if prefered.

     

    Cut zucchini roughly, put into bowl - 2 secs, speed 5.  Scrape down, repeat.  Scrape out onto a double sheet of paper towel and lightly sqeeze excess moisture out.  Return to bowl and insert butterfly.

     

    Add eggs, coconut oil (or melted butter), sugar and vanilla - Speed 3, 6 seconds.

     

    Add remaining dry ingrediants - Speed 3, 6 seconds, scrape down and repeat.

     

    Scrape out into prepared tin and bake 30-35 minutes until springs back when lightly touched and coming away from edges.  Or use skewer to test.

     

    Can be enjoyed while still warm or cold.  Refrigerate to store.

Tip

Can also be divided into 12 muffins, but reduce baking time to approx. 20 minutes.

    This is amazing! I wasn't sure what to expect after reading all the comments, however mine had more than enough rise and turned out so delicious! I only had a smallish zucchini (110g) and I used extra virgin olive oil instead of coconut oil/butter and it worked out fine. Really moist and surprisingly chocolatey.

    Made mine into muffins. Used cocoa, normal flour, dextrose and avocado oil as substitues and didn't squeeze out zucchini.

    Great healthy recipe for the whe family, the chocolate was yum. I also didn't squeeze out the zucchini and used normal flour. My 3 year old and 10mths old loved this, super moist and fluffy/light. My zucchini was pretty big and I wished I grinned it for longer as the bits were a little on the big side but no one complained tmrc_emoticons.)

    Excellent recipe! Made this into muffins and it was moist and delicious. I was worried I'd removed a bit too much moisture from the zucchini so I only used 25gr of coconut flour, and I did 3/4 tsp of baking powder and soda after reading previous comments that the mixture didn't rise, and it worked well. I also added a handful of chopped walnuts. Loved it and will be making a second batch today and another batch for my daughters 4th bday in a few days. Thanks for posting!

    This is really nice and easy to make. I used rice syrup instead of sugar and only used 40g. Very moist and although he didn't think it looked much the husband really enjoyed it.

    I have the same problem, so looked it up. An average, medium zucchini weighs approx 200g. Maybe use a chunk of a giant one and make spring rolls or something with the rest.

    Made this last night, found the 'Batter' to be very dry but persisted as I followed recipe exactly and made 12 cupcakes.   They didn't rise very much and came out like small rounds of dirt tmrc_emoticons.((      I'm not sure what I did wrong, dissapointed.

    About how much would a 'medium' zucchini weigh? I have zucchini in the garden that are anything from small to giants according to how long it is before I pick them - a medium one of them would be one of the largest available in my grocers. A cm size for the zucchini would be very helpful.

    Turned out really nice. Not too sweet - just right. Used 80 g of raw sugar. Was surprisingly moist and stayed so until it disappeared. May use more cacao for a more chocolatey taste.
