60g butter

  • 1/4 cup rice brand oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp Vanilla Bean Paste
  • 1/2 cup Butter Milk
  • 2 1/2 cups plain flour
  • 4 tsp cocoa
  • 2 small zucchini's
  • 90g chocolate bits

Recipe's preparation

  1. pre heat oven to 160

    1. chop zucchini into 4 pieces and place in Closed lid chop on speed 8 for 40 sec and set aside for later use

    2. place oil, butter, sugar, eggs, and vanilla bean paste & butter milk into bowl mix on speed 6 for 1min 

    3. place flour into Closed lidand mix on speed 4 till combind can take up to a min

    4. place zuchinni and choc bits into Closed lidGentle stir setting on soft speed for 1min 

    poor mixture in prepared cake tin and bake for around 30min or untill cooked and firm

Tip

great to get extra veg into children. People cant believe it when you tell them there is zucchini in the slice. 

You can also place chocolate icing on top

    Total failure. A big mass of heavy doughy failure. Even tried cooking in large slice tin. In the freezer now and maybe will try with custard. Would have thought it would need baking powder or something seeing plain flour was used. Wasn't confident from the start but thought would give it a go as had a zucchini to be used. And no mention of how much butter. Think recipe needs to be re hashed.

    I love this recipe! Thanks Reb.  I've made a few adjustments to it though.  I add 4 Tbs cocoa or even a bit more, and I add it with the flour.  I chop the zucchini just for around 8 sec.  Is it right to use a quare cake tin?
