Christmas White Chocolate, Black Cherry & Raspberry Cheesecake

Base

  • 1 package Chocolate Ripple Biscuits
  • 100 g Butter

Filling

  • 375 g Philadelphia Cheese, softened
  • 115 g castor sugar
  • 2 eggs
  • 125 g thickened cream
  • 125 g white chocolate melts
  • 125 g frozen raspberries
  • 125 g Pitted Black Cherries

Black Cherry & Raspberry Coulis

  • Rest of the Cherries left over from the tin with the juice
  • 10 frozen raspberries
  • 15 g castor sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base
  1. Add biscuits to the TM bowl

    Crush for 5 secs / speed 5

    Add 100g butter (soft), cut into cubes

    Combine for 10 secs / speed 5

    Press into the base of a greased and linced springform pan (20cm)

  2. Filling
  3. Heat the oven to 160 degrees, fan forced

    Add the white chocolate melts & thickened cream into the TM

    Melt for 2 mins / 90 degrees / speed 2

    Add sugar & philadelphia cheese & mix for 1 min, speed 5

    Add eggs

    Mix for 5 secs / speed 5

    Add only the drained pitted black cherries & frozen raspberries

    (Keep the juice & left over cherries for the coulis)

    Combine for 5 secs / speed 5

    Pour the filling into the prepared base

    Place into the oven for 40 - 45 mins until set

  4. Black Cherry & Raspberry Coulis
  5. Add the juice, cherries & rasberries to the TM bowl

    Add the sugar

    Cook for 5 mins, 90 degrees, speed 2

    Allow to cool completely before covering the cheesecake

Tip

Once the cheesecake has cooled, add extra frozen rasperries over the coulis with a sprinkle of icing sugar  (optional)
