Cinnamon Rolls inspired by Pioneer Woman

Ingredients

Dough

  • 480 g Milk
  • 110 g vegetable oil
  • 110 g white sugar
  • 1 sachet dry yeast, approx 7-10 g
  • 640 g bakers flour
  • 1/2 tsp Baking (Bicarbonate) Soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 85 g bakers flour, (Additional)

Filling

  • 150-200 g Butter
  • 100 g brown sugar
  • 110 g white sugar
  • 100 g walnuts, (Optional)
  • 2-3 tsp Ground Cinnamon Powder, (adjust to your tasting)

Icing/Glaze

  • 85 g Butter
  • 400 g icing sugar
  • 80 g cream cheese
  • 1/2 tsp Vanilla Paste, (optional)
  • dash lemon juice, (adjust to your taste)
  • 40 g Milk

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Dough
  1.  

    Place milk, oil and sugar into the bowl and mix 2 mins / 95c / speed 2.

     

    Add yeast and allow to rest in the bowl for 1 minute. Add the 640g of flour and mix for 1 minute / Dough mode Let it prove in the bowl for approx 1 hour.  Dough may come out of the bowl through the MC hole, if this happens, before adding the next ingredients, mix 30 sec / Dough mode will put it down again. Add baking soda, baking powder, salt and the 85g flour and mix for 1 min  / Dough mode.  You can either use the dough now or refrigerate for up to 3 days (can also freeze).  The dough is fairly sticky and is easier to roll out if it has had a few minutes in the fridge to firm up. Split the dough into 2 equal parts. Roll the dough out into a large rectangle on your thermomat or bench.  It should be rolled quite thin.

Place Butter, Brown Sugar, White Sugar into bowl for 20 sec / speed 6 Split the butter into 2 parts - spread the butter mixture over the entire rectangle and then sprinkle as much cinnamon & chopped walnuts (if using) as you like depending on your taste, repeat for second roll. Starting at one of the long ends, roll up the dough tightly until it is all rolled up, ensure the seam is face down. Cut the roll into 2-3 cm wide making 12 slices. Place the slices into some greased oven pans (I use the disposable roasting tin ones much easier to clean).  Set the dough aside to rise again for at least another 20 mins. Or in warm weather put outside for a few minutes should almost double in size. Preheat oven to 180c.  Bake the rolls for about 15-18 mins, don't let them become too brown!

    Combine all the ingredients in the Thermomix bowl and mix 40 sec / speed 9

     

    Icing should be of a thick but pourable consistency - If it is too thick add a little extra milk. Pour the icing over the scrolls whilst they are still warm.

    SCROLL COMAYup thats what happened to me, these are fantastic, but the fatal mistake i made was actually making them. Way to good, that i overate and now feel all scrolled up and cant move. Absolutely fantastic. These were reccomended by my customer and wow, she was right, thanks bec.
