- 40 grams raw sugar
- 3 teaspoons ground cinnamon
Dough
- 50 grams Butter, Cubed, Room Temp
- 225 grams Milk
- 5 grams Dried Instand Yeast
- 15 grams raw sugar
- 375 grams bakers flour
- pinch Salt.
Butter Icing
- 75 grams Butter, Cubed, Room Temp
- 100 grams raw sugar
- 1/2 teaspoon vanilla extraxt

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Add all Cinnamon Mix ingrediance in TM bowl and 10sec/speed4. Set aside.
Add butter and milk to TM bowl, heat and melt butter 3min/50C/speed2.
Add remainding ingredients and mix 6sec/speed6, then knead 5min/"Closed lid" /"Dough mode" .
Transfer dough onto ThermoMat (or lightly floured benchtop) and work into a ball. Wrap in ThermoMat (or place in a bowl and cover with a tea-towel). Leave to prove in a warm place for 30 min or until doubled in size.
Preheat oven to 180C.
Knock down dough. Roll into 1/2cm thick rectangle (about 40cm x 30cm). Spread cinnamon mixture over dough
Roll into a log and cut into 10 scrolls.
Place scroll pieces cut side up on baking tray with baking paper. Leave to prove for 20 min in a warm place.
Bake 15-20 min until golden and cooked through.
Mill suger for 10sec/speed 9Add butter and vanilla extract and mix to combine speed6-7/37C/15seconds.
Spread over warn scrolls and Enjoy

Wow, these taste sensational. Such an easy recipe. I'm not really a baker and haven't ever used yeast before. Really simple recipe but the end product looks like it was baked by a professional. We baked these today as a practice run for Christmas day brunch. Amazing.

Recipe hard to follow at times, saying add all remaining ingredients, but that does not include the icing ingredients which for a novice cook would be hard to follow.

These are seriously fantastic. The dough is amazing to wirk with and they are very simple to make. I’ve done them for charity brunches at work and the whole company was talking about them ans complimenting me.

Fantastic recipe! Have made these multiple times now and they are always delicious!! I've used Nutella for the filling in some of the batches, but can never decide whether the cinnamon or Nutella ones are nicer.

I have never had any success
I have never had any success with any kind of bread/dough recipe. Ever. I tried this tonight when I couldn't sleep (it's 3am). I really had my doubts but thought if I failed dismally again no one would be awake to witness it. I've just polished off the most divine, fluffy, perfect scroll with a cup of tea. These are amazing!! I'm fighting the urge to help myself to another. I will definitely be making these again and trying out some more filling choices although cinnamon is always my favourite.

These are great. I just made a couple of changes with the cinamon mix I just added 10g butter and 1 extra tesp of cinnamon. With the butter icing I changed it to 10g less of butter. Just made a batch and they were gone in 5 minutes. Yum!

These are delicious, can hardly stop at one, right?! Easy to make and turn out a treat! Only problem is, once you have them taste this good you will never be off the hook and will always have to make them, although I don't think I could bring myslf to buy shop made ones again! I did add an apple custard purée to the roll but will taste just as good without it!
