Ingredients

  • 2 mandarins, Leave the skin on, quatered
  • 225 grams Butter, Softened
  • 200 grams sugar
  • 5 eggs
  • 300 grams Self Raising Flour

Recipe's preparation

    Easy whole mandarin cake
  1. Preheat oven to 180C. Grease and line 20cm cake tin.

    2.  Place mandarina (don't bother peeling them!) and butter into mixing bowl and mix 7 sec/speed 8. Scrap down sides of bowl and blitz again for 7 sec/speed 8.

    3.  Add remaining ingredients and combine 20 sec/Counter-clockwise operation/speed 4.

    4.  Pour into 20cm round cake tin and bake for 50-60 minutes.

    I was looking for a recipe to make that I didn't have to source anything from the supermarket for and made these into muffins. I rarely eat anything that contains sugar but I thought that I should try one before handing them out to others at a Christmas party tomorrow. It was delicious. So moist and the sugar content was really good, although it did sound like quite a lot, but they're definitely

    This cake was amazing. Although I generally don't like to comment on something that I changed quite a lot on this occasion I thought I would list my changes. 150g butter, 130g sugar, 3eggs, 250g SR and 80 g almonds ( ground in TM ). I think the Almonds gives it a bit of a grainy texture and that really added to the cake. I did remove some of the seeds. The Mandarin is a beautiful flavour and I think even better than the orange. Thank you so much for suggesting it. Smile

    Lemon Delight.
    I used 2 lemons from my garden, removed the seeds & the ends & added 50g coconut. It made a huge cake so i halved it & added a layer of lemon butter then topped it off with lemon cream cheese frosting. Decadently delicious!
    Will definitely be making again trying out the many different fruity alternatives Smile

    Always make this when I have old mandarins or ones that aren’t nice to eat. It’s always a hit and easy to modify to what citrus fruits I have on hand and I also adjust the sugar depending on how sweet (and juicy) the fruits are. Sometimes I add a bag of dark choc chips at the last step. So easy and yummy! Thanks so much for this recipe!

    Very moist and easy to make.  I did make a lemon syrup as I didn't think the Mandarin was very flovoursome, however it could have been the ones I had and not the recipe, so I will give it another go before I rate it.  Thank you
