  • 3 free range eggs
  • 60 grams raw Organic Honey
  • 60 grams vegetable or macadamia nut oil
  • 1/2 teaspoon baking soda or bi carb soda
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

Recipe's preparation

  1. Preheat your oven to 180 degrees

  2. Place almonds into TM bowl and mill for 6 seconds on speed 6.

     

  3. Add smashed ripe bananas, honey, oil, cinnamon, vanilla, eggs and bicarb soda and mix on speed 5 for 5 seconds

  4. Place mixture into one loaf tin - lined with baking paper and bake for 45 minutes to 1 hour.

Tip

Serve warm or at room temperature by itself or with a little ricotta or greek yoghurt and honey or blueberries.  It keeps in the fridge for 1 week, or freeze into slices ready to use.

    I'm impressed that this is rated so highly when it excludes bananas from its ingredients list.  I'm about to make with three bananas will report back.

    The most delicious moist gluten free banana bread EVER. It is not often that your non celiac friends ask for the recipe. the almonds were not totally milled so they added an amazing texture and it was not too sweet. I have substituted rice malt syrup for the honey and it was just as delicious

    I love this Banana Bread. I put in 2.5 medium bananas and cooked the loaf for 45min. It was cooked through but a little too brown on top. Next time I will put tin foil over it for the last 10 min. I would love to add some blue berries too and see how that goes. Loved it! tmrc_emoticons.)
