- 230 grams raw sugar
- 2 eggs
- pinch salt
- 30 grams Coffee Essence
- 400 grams Self Raising Flour
- 1 teaspoon mixed spice
- 250 grams Milk
- 2 teaspoons Bi Carb Soda
Icing
- 30 grams Butter
- 270 grams icing sugar
- 1 teaspoon Coffee Essence
- 1-3 tablespoons Water as required

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Pre Heat oven to 180 degrees and grease cake tin.
Place butter and golden syrup in bowl. Melt 3 mintues 70 degrees Speed 2. Set aside. Clean and dry mixing bowl.
Add sugar and eggs and beat 1 minute 30 seconds Speed 4.
Add reserved butter and golden syrup and beat 30 seconds Speed 4.
Add salt, coffee essence, flour and spice. Mix bi-carb soda in to milk in seperate bowl then add to mixing bowl. Mix 20 seconds Speed 3. Scrape down sides of bowl and Repeat.
Pour in to prepared tin and cook for 20-30 minutes depending on size and shape of tin
Add butter to clean dry bowl and melt 2 minutes 70 degrees Speed 2.
Add icing sugar and coffee essence and mix 30 seconds Speed 3.
Slowly add water through hole in mixing bowl lid until desired consistency is achieved. You may not need all the water

Tip
I use a large square or round tin. Or you can use two smaller round tins to make the cake taller. I whipped cream, layered and finished off with chocolate sprinkles.
