Ingredients

Base

  • 130 g quinoa grains
  • 60 g almonds
  • 60 g Coconut, flakes
  • 90 g Rapadura Sugar
  • 1/4 tsp salt
  • 1/4 tsp bi-carb soda
  • 1/4 tsp ground cinnamon
  • 100 g Butter, - chopped
  • 55 g Maple syrup

Filling

  • 150 g dried cranberries
  • 100 g sour cream, (or creme fraiche, or natural yoghurt)
  • 60 g Rapadura Sugar
  • 15 g Corn Flour, (or coconut flour)
  • 1 tsp vanilla extract
  • 1/2 rind of 1 orange
  • 1 egg white, - large

  • 60 g Coconut, flakes

Recipe's preparation

    Base
  1. Pre-heat oven to 160C.

  2. Place quinoa & nuts into TM bowl.  Grind for 1 minute on speed 8.

  3. Add all other base ingredients to TM bowl.  Mix for 10-15 seconds on Speed 6, until the mixture comes together.


    Leaving about 3/4 cup of the mixture in the TM Bowl, tip the remainder onto a lined slice tin (mine measures 27cm x 16cm).  Press down firmly.


     

  4. Topping
  5. Add coconut flakes into the TM bowl, with the remaining base mixture.  Mix for 2 seconds on speed 5. 


    Set aside.

  6. Filling
  7. Place orange rind in TM bowl.  Grind for 3 seconds on speed 8.

  8. Add all other filling ingredients.  Mix for 5 seconds on speed 5.


    Pour mixture over slice base.

  9. Assembly & Baking
  10. Sprinkle reserved topping mixture over the filling and lightly press down.


    Bake in 160C oven for approximately 40 minutes, or until golden and fragant.


    Devour.

    I suggest rinsing the quinoa first to remove the bitter taste it has - then there's no distinctive 'quinoa' taste to it tmrc_emoticons.)  It's agreat recipe that I've made with different fillings like dates, jam and lemon butter tmrc_emoticons.D
