Creamy Coconut Slice

Ingredients

35 slice(s)

Base

  • 45 g Coconut, 1/2 cup
  • 125 g Butter, cubed room temp
  • 60 g castor sugar
  • 200 g Self Raising Flour

Topping

  • 45 g Coconut
  • 140 g icing sugar
  • 30 g Butter
  • 75 g condensed milk
  • 10 g Coconu, For top of slice

Recipe's preparation

    Base
  1. Line and grease 19 x 29cm Lamington Pan.

     

  2. Preheat the oven at 180 degrees conventional.

     

  3. Place Coconut in a smalll heavy base saucepan, stiring constantly over a meadum heat until lightly Browned, leave to cool.

     

  4. Place butter and castor sugar in bowl and mix on speed 5 for 20 seconds. Scrape down sides.

     

  5. Add S.R. Flour and mix speed 5 for 10 seconds. Pour out onto the prepared lamington tray and pat down with mc covered in baking paper.

     

  6. Bake in oven for 15 mins or until lightly browned. Allow the base to cool.

     

  7. Topping
  8. Add butter to bowl and melt on 80 degrees for 1 minute speed 1.

     

  9. Add condensed milk, Icing sugar and mix on speed 4 for 10 seconds. Scrape down sides

     

  10. Add coconut and mix speed 4 for a futher 10 seconds.

     

  11. Spread mixture over cooled base then sprinkle with reserved 10g of coconut. Refrigerate for at least 1 hour before serving.
