Muffin Mix
- 1 --- Peel of Lemon, Peel with potato peeler
- 1 small piece fresh ginger, About a thumb size, peeled
- 200 g brown sugar
- 160 g Milk
- 180 g softened butter
- 2 teaspoon vanilla essence
- 3 eggs
- 300 g Self Raising Flour
Lemon Syrup Topping
- 2 Lemons juiced
- 100 grams brown sugar

Recipe's preparation
Chop ginger into cubes and add lemon peel. "Closed lid" Blitz on turbo twice. Scrape down with spatula.
2. Add sugar "Closed lid" 1 min/ speed 6, scrape down bowl
3. Insert butterfly. Add the rest of the ingredients
Mix "Counter-clockwise operation" 2 mins/ speed 2
Scrape down mix "Counter-clockwise operation" 1 min/ speed 2
4. Spoon into prepared muffin tins. I prefer to use the muffin liners or the silicone patty cake liners
5. Cook for 20-25 mins 180C
1. Add juice and sugar "Closed lid" just before pulling muffins out of oven. 4 mins/ 100C/ speed 1
2. Remove cooked muffins from oven but leave muffins in tin or liners.
3. With pastry brush, brush a generous amount of syrup over muffins.
4. Wait 5 mins and then remove from tin and let cool on wire rack.
Syrup will crystalise on top of muffin and become crunchy
