Date and Banana Muffin with Maple Syrup Glaze

Muffins

  • 130 g pitted dates
  • 130 g warm water
  • 1 tsp vanilla extract
  • 360 g SR flour
  • 55 g plain flour
  • 1 tsp cinnamon, plus 1/2 tsp extra
  • 1/2 tsp bicarb soda
  • 100 g brown sugar
  • 250 g banana, mashed
  • 2 free range eggs, lightly beaten
  • 190 g buttermilk
  • 90 g vegetable oil

Glaze

  • 1 tbsp unsalted butter
  • 80 g Maple syrup
  • 1 tbsp brown sugar

Recipe's preparation

    Muffins
  1. Preheat oven to 200/180C. Grease 12 hole muffin tin.


    Weigh in dates and chop 6 seconds speed 6. Then cook for 3 minutes, 100C, speed 1. Set aside.


    Add banana, eggs, buttermilk, oil and brown sugar mix speed 6 for 20 seconds.


    Add flour, cinnamon and baking soda mix speed 5 for 10 seconds, scrape sides down and in required      another 5 seconds speed 5.


    Add date mixture 30 seconds, Dough mode.


    Spoon mixture into muffin tin.


    Bake for 20 minutes until golden and firm to the touch.

  2. Glaze
  3. While muffins are baking, add all glaze ingredients into a clean TM bowl and cook 3 mins, 60C to heat and combine.


    Once the muffins are cooked and have started to cool, brush with the warm maple glaze.

  • delicious! i made gluten free

    delicious! i made gluten free version and added some coconut as i didnt have enough gluten free flour.  i also assumed you cooked the dates with the water and this worked perfectly. not sure where to put the vanilla but i added to the mixture with the milk.  i didnt have buttermilk so i used the same amount of soy yoghurt and soy milk (50/50). divine! will make again.

    I assume the water is to cook the dates in?
    That's what l did and it worked beautifully.
    I also doubled the time to chop the dates and also to incorporate it into the batter.
    Oh and l managed to get 18 large muffins from this, thank you!!! X
