- 2 eggs
- 180g Butter
- 120g brown sugar
- 1 tsp vanilla
- 3 tsp ginger ground
- 1.5 tsp cinnamon powder
- 350g plain flour
- 1.5 tsp bicarb soda

I'm cooking this todayRecipe's preparation
chop dates 5-8secs/speed 7 till chunky not mushy
set aside no need to wash bowl just add butter/sugar/vanilla
and mix 30-40secs/speed 6 scrape down a couple times to ensure mixed well
add eggs and mix 10secs speed 6
scrape down bowl and addhalf flour/ bicarb/spices and mix 15-20secs interval speed
add rest flour again mix 15-20secs till combined look through hole in lid
add dates and mix on reverse till mixed through again just look through hole in lid
divide into 24 even portions and put onto 2 baking trays i then wet my hands and rolled into balls and squashed lighty
cook 180oven till brown about 10-15mins will harden on cooling but is a fairly soft delicious cookie

Yummo super easy but they seem to be disappearing quickly
hi i made error only replaced the crystalized ginger with dates as i had none so 300g but when i rolled them i did stick a date inside i love the gooey texture when they are cooked ha ha ,i thought with the 3tsp ginger it was perfect so probably did not miss the crystalized ginger .what a nice recipe thou
Hi jeodon, I've made the variant, and note you have doubled the dates. I think the original recipe would benefit from the extra dates. I would leave the crystallised ginger in and cut back on the sugar. The original recipe was nice, but I look forward to trying your version.
