  • 200 g Fresh Dates, de-seeded
  • 100 g Glacé ginger
  • 180 g Butter
  • 120 g brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 350 g plain flour
  • 1.5 tsp bicarb soda
  • 3 tsp ground ginger
  • 1.5 tsp ground cinnamon

Recipe's preparation

  1. 1. Place dates and glace ginger in the bowl and chop for 5 seconds on speed 5.  Set aside.

  2. 2. Place butter, brown sugar and vanilla extract in the bowl and mix for 30 seconds at speed 6.  Scrape down sides of bowl.

  3. 3. Add eggs.  Mix for 10 seconds at speed 6.  Scrape down sides of bowl.

  4. 4. Add half of the flour plus the bicarb soda, ground ginger and ground cinnamon.  Mix for 15 seconds at dough mode speed.

  5. 5. Add the remaining flour.  Mix for 15 seconds at dough mode speed.

  6. 6. Return the chopped dates and glace ginger to the bowl and mix for 10 seconds counter-clockwise operationGentle stir setting.

  7. 7. Form into balls (approx golf ball size) and place on lined baking tray.

  8. 8. Bake for 15 minutes at 180 degrees.

Tip

This makes 24 large biscuits.  Make smaller dough balls if you prefer smaller biscuits (and you will also increase the number of portions).

    So easy!
    I only had 100gms white flour so added 230gms of wholemeal not 250gms. Was hard to mix the flours and fruit together at the end so maybe if I use wholemeal flour again might cut back to 220gms. Also did the 80gms of sugar like others did. I kept eating the raw mixture. It was yum! Made 29 biscuits.

    Delicious. I used 2tbsp tapioca and a dash of chia seeds plus some milk in place of the egg, and nuttelex instead of butter to make them vegan. I accidentally kept the ginger and dates in while I blended it but they were still delicious. tmrc_emoticons.-) I'll do it as the recipe suggests next time.

    These were good. A soft biscuit not crisp. Had no glacé ginger so added 4 tsp ginger. Could have added more. Didn't have fresh dates. Used pitted dried dates and chopped for 10 seconds. Had these for my FIL 92nd birthday. He was happy 😊

    The best ginger biscuits ever. I also reduced sugar to 90grams and next time would try 80grams as the date makes them super sweet already. Really soft and yummy! I had to cook mine a tiny bit longer.

    A soft cakey cookie. On another suggestion I used 300 grams pitted dates and no glace ginger. I upped the ground ginger to 5 teaspoons. My mix made 32 biscuits. Thumbs up from Mr 7 and me  tmrc_emoticons.)

    Yummy, yummy! I didn't have any glace ginger so I used 300g of dried pitted dates and chopped them for a little longer.  I also used Nuttlex (dairy free butter) rolled them into teaspoon sized balls and pressed them with a fork! It made 75 biscuits!!!! Family favourite for sure!!!  Cooking 7

    These smelt so good when they baking.   I reduced sugar to 90g and they were still flavourful. Maybe next time I'll make them smaller and flatten them so they look more like biscuits rather than rock cakes.  Very tasty. Thanks for sharing.
