Decadent Chocolate Brownies

700 grams Sweet Potato (or one large)
3 eggs
100 grams honey
125 grams oil, Coconut or grapeseed
1 heaped tablespoon GF baking powder
1/4 teaspoon bicarb soda
100 grams Cacao or unsweetened Cocoa powder
50 grams tapioca flour, can substitute Coconut flour if preferred
1 teaspoon Vanilla Bean Paste, use vanilla extract if preferred
1 teaspoon cinnamon, optional

  If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
  For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
  
  Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

Pre-heat oven to 170 degrees celsius.

Prepare slice tray by lightly greasing and lining with baking paper.

Peel and roughly chop Sweet Potato and add to bowl. Process 15 seconds/speed 9. scrape down sides.

Add all remaining ingredients and process for 30 seconds/speed 4 util combined. Scrape down sides (repeat if required).

Spread mixture evenly into slice tray

Bake for approximately 40 minutes (springs back in centre when cooked) Cool in tray. Ice with preferred icing (melted, organic milk chocolate used in picture) in tray when cool. Use baking paper to lift out of tray to slice and serve.
