Double Chocolate Banana Muffins

Ingredients

Batter

  • 125 g Butter
  • 140 g sugar
  • 2 Eggs.
  • 3 Overripe Medium Bananas
  • 310 g Self Raising Flour
  • 1/2 teaspoon bicarb soda
  • 2 tablespoon Milk
  • 3 tablespoon cocoa
  • 50 g choc chips

Recipe's preparation

  1. Preheat Oven 180 Degrees. Place patty cases in muffin tray

  2. Cream Butter and Sugar - Speed 5/2 minutes.

  3. After one minute of mixing, add one egg at a time through hole in lid. Add both eggs before 2 minutes is up on timer.

  4. Scrap down sides of bowl and add banana's. Mix Speed 4/ 20 seconds.

  5. Add flour, Bicarb Soda, Cocoa and Milk. Mix Speed 4/ 20 seconds.

  6. Add Choc chips and mix Counter-clockwise operationSpeed 4/ 10 seconds.

  7. Spoon mixture into muffin tray.

  8. Bake for 20 minutes or until firm and skewer clean when inserted.

Tip

I find the muffins sweet enough without icing. You can add sliced banana to top of muffins before baking.

    I can only assume that these taste good - every time I make them, they seem to disappear the minute they're out of the oven. Lovely moist muffins. They have become a regular snack in our household. Thanks for sharing. Smile

    Great recipe. So delicious & moist! I halved the sugar (used raw sugar), used 4 bananas & didn’t use the chocolate chips. Turned out perfectly & a his with the kids.

    These were delicious, light and fluffly muffins! I used 130g raw sugar and cacao powder instead of cocoa. I'll try less sugar again next time. Thanks for the recipe Smile.

    I used wholemeal self raising flour and halved the sugar. I find it funny how many mention using coconut sugar instead as it is healthier. sugar is sugar it all does the same thing to your body. next time I am going to try adding apple puree and cutting the sugar and milk. using very ripe bananas also makes it sweeter.
