Easter Bunny's Carrot & Apple Hot Cross Buns

Dough

  • 150 grams carrot, peeled
  • 100 grams apple, core removed
  • 1 orange zest
  • 1 teaspoon Nutmeg
  • 1 heaped teaspoon cinnamon
  • 7 grams dried instant yeast, or 40g fresh yeast
  • 250 grams Milk
  • 50 grams honey
  • 650 grams bakers flour, or I use 300g spelt flour & 350g bakers flour
  • 2 teaspoons salt
  • 70 Butter
  • 150 grams egg
  • 150 sultanas

Cream Cheese Crosses

  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1 heaped teaspoon cinnamon
  • 250 grams cream cheese

Recipe's preparation

    EASTER BUNNY'S CARROT & APPLE HOT CROSS BUNS
  1. Place zest, carrot & apple into the TM bowl & chop for 5 secs speed 7. Place to one side.

    Add milk, honey and yeast into mixing bowl with the spices and heat 1 min/37deg/speed1.

    Add zest, carrot & apple, flour, salt, butter, egg and mix 6 sec/speed7 then knead 2-3 minClosed lidDough mode.

    Add sultanas, currants and combine 10-15 sec/reverse/speed 5.

    Allow to rest in warm place covered with tea towel for 30-40 minutes then divide into 12 buns & place on baking tray covered with baking paper. Allow to rise in a warm spot.

    Preheat your oven to 200 degrees.

    Bake for 20 -25 mins until golden brown. Brush with some extra honey to glaze them.

  2. Cream Cheese Crosses
  3. Place all ingedients into the TM bowl & chop speed 5 for 5 secs. Place mixture into piping bag & pipe crosses over slightly cooled buns. Any leftovers of this mixture are great to spread directly onto the buns when you cut them open.

Tip

You may prefer to use white chocolate chip buns instead of the fruit!!

Or use melted white chocolate on top as the crosses instead of the cream cheese.
