Easy pear muffins - kids lunchbox friendly

Ingredients

12 portion(s)

  • 400 g tinned pears
  • 350 g Self Raising Flour
  • 125 g sugar
  • 150 g Milk, Or soy milk
  • 50 g oil
  • 1 portion egg

Recipe's preparation

  1. Preheat oven 180 degrees


    Grease 12 tin muffin tray

  2. Drain pear juice and empty pears into jug. Chop speed 4 for 1 second. If you prefer less chunky pears you can chop for longer

  3. Add all other ingredients and mix Speed 3 counter-clockwise operation for 30 seconds or until combined

  4. Spoon into muffin tray and cook for 15-20 minutes until lightly golden and muffins springs back when pushed in centre

Tip

Can use peeled fresh pears instead cut into quarters. Additonal ingredients can be added in to taste I.e apples, berries, choc chips or desiccated coconut.

Freezes well, just pop into lunchbox and will defrost by lunch time.

    Absolutely delicious! a hit with the kids, the husband and myself. So easy, and so moist which is hard to achieve in a muffin. I halved the sugar and they were sweet enough. Thanks for a great recipe tmrc_emoticons.)

    Very versatile recipe. I have made this with various fresh fruit now and they always turn out great. I have halved the sugar everytime also, as I find the fruit makes them sweet enough. Have also replaced the milk with various yoghurts instead too!

    I halved the sugar and added some fresh pear to the bottom of the muffin tin before I poured the mix in, topped with some
    cinnamon and it baked perfectly!

    Used some bottled peach halves that were hanging around in the fridge and used half cream half milk. Brushed on some butter and sprinkled cinnamon/sugar when out of oven. Took about 1 minute of work to make!
    Kids gobbled them up immediately. Will make again.

    Very easy and yummy.  I have made these a couple of times now and they always turn out beautiful and moist. I use fresh pears and if I don't have enough I add an apple and just chop first. I also add a tsp of cinnamon. Thanks Eloise!

    Just Made these and added white choc pieces (to keep the husband happy) and made them in mini loaves instead of muffins. Just cooked a little slower. Worked out great!
