Easy As Red Velvet Cupcakes & Buttercream Icing

Ingredients

12 piece(s)

Cupcakes

  • 180 grams raw sugar, ground to caster sugar
  • 60 grams softened butter
  • 200 grams plain flour
  • 1 large egg
  • 10 grams cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon bicarb soda
  • 1/2 teaspoon vanilla extract or essence
  • 1/2 teaspoon white vinegar
  • 1 tablespoon Red liquid food colour
  • 1/2 cup buttermilk

Vanilla Buttercream Icing

  • 300 grams sugar
  • 150 grams Butter, room temperature
  • 1/2 teaspoon vanilla extract or essence
  • 1.5 tablespoons Milk, If mix is too thick

Recipe's preparation

    Cupcakes
  1. Pre heat oven 180 degrees.

    Grind raw sugar for 5 secs speed 10

    Add all other ingredients & blend 2mins speed 4.

    Divide into cupcake cases & bake for around 15 mins.
  2. Vanilla Buttercream Icing
  3. Grind sugar for 20 secs speed 10 scrape down sides & repeat. (or cheat and use store bought for really white icing)

    Add butter & milk, blend speed 8 20 secs.

    Pipe or spread buttercream onto cupcakes.

    Really easy and yum. I doubled in my tm5 no worries. Used soy milk and nuttelex to make dairy free and couldn't taste the difference. So happy tummies all round!

    Love love love this recipe! I made it dairy free using Nuttelex and Almond Milk subs. Be careful adding liquid to the icing because Nuttelex is already soft. The batter can be doubled for TM5. No need to double the icing, there is plenty!
    A tip for the recipe writer ... Could you please put the sugar as first ingredient with the milling to icing sugar prompt? Saves dirtying bowl with the butter when you need to do that step. Also for the remaining ingredients that get added at the same time put the dry ingredients first so you can use same measuring spoons more easily.

    Great tasting cupcakes! We substituted yellow food colouring as we had run out of red. They ended up looking like chocolate cupcakes Big Smile and we put aqua frosting. Yummy!

    Delicious cakes! I used low fat milk but added the vinegar and left for 30 minutes as a substitute for buttermilk. I added an extra tablespoon of milk to the mix instead of food colouring. I loved the icing but left out the milk altogether as my butter was extra soft and it was easy to pipe like that. Made 11 medium muffin-size cakes.

    The colour comes from the butter. Nuttelex makes a similar tasting icing, but is white. Also dairy free, which can be handy.

    The only way to get white butter frosting is to use Nuttelex rather than butter. It is lighter tasting, and as it is already white works perfectly. Many Cake Decorators use this.

    Simple recipe, made 16 medium size cupcakes. I only added half the amount of red food colouring as that was all I had, didn't really have the right colour for red velvet but who cares if they taste good! I would suggest cooking at a slightly lower temperature for longer so that the cupcakes rise evenly and look better when frosted. I didn't use the buttercream frosting recipe attached here as this is the exact same icing recipe from another another cupcake recipe on RC, I find that it tastes too buttery as it is not whipped long enough.

    Fantastic! The colour and texture of the cupcakes was perfect! The cupcakes weren't overly sweet, the icing was very sweet, together they made a perfect combination! My icing was quite yellow (I think it was the butter as I used store bought icing sugar), but the yellow icing on the red cupcake looked truly spectacular! A definite make-again! Five stars!

    My cupcakes turned out perfectly.  My buttercream turned out a light brown colour.  How can I make it turn out white like the phot.  I used raw sugar that I milled into icing sugar and vanilla essence in one batch and none in the other batch and it stilled turned out brown.  Please help!
