- 80 g castor sugar
- 60 g dates, pitted
- 100 g Saltanas
- 1 --- rind of a lemon
- 150 g butter chopped
- 2 large eggs beaten
- 160 g Milk

Recipe's preparation
Add dates and chop for 10 seconds on speed 7 and set aside.
Add sugar, plain flour, butter and mix for 10 seconds on speed 4.
Add dates, saltanas, lemon rind, eggs, milk and mix for 10 seconds, speed 4 on reverse.
Spoon onto a baking paper lined oven tray.
Preheat oven to 170C

I used mixed dried diced fruit instead of dates, still yum!

These rock cakes are extremely yummy and addictive! A big thank you for reviving my childhood memories as they tasted exactly like the ones my dear Nanna used to make, except she sprinkled a little sugar on top of hers. My 4 yr old son is not a "cake" person but he loves these.
