Cake

  • 250 grams feijoas
  • 125 grams Milk
  • 2 eggs
  • 200 grams white sugar
  • 1 tsp vanilla essence
  • 75 grams Butter, softened
  • 2 Cups plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Feijoa Cake
  1. Peel feijoas and chop in half.  Place in TM bowl. 5 sec/Speed 5 to mash.

    Place Milk, Eggs, White sugar, Vanilla Essence and butter in TM bowl. 5 sec/Speed 4 to combine.

    In separate bowl combine dry ingredients.  Fold in wet ingredientts.

    Place mixture into greased and baking paper lined 20 cm cake tin.  Bake at 180 degrees for 40 minutes.  Allow to cool.

  2. Cream Cheese Icing
  3. Mill White Sugar for 10 sec/Speed 10.

    Add Cream Cheese and lemon 10 sec/Speed 6.  Scrape down sides then 10 sec/Speed 6.

    Ice cake with icing.

    This cake is just as good (although slightly weird) as the feijoa itself... I like it!

    It was nice and fluffy and just the right sweetness (I cut the sugar down to 150g, but then again, that's what I usually do. I also used 1.5 cups plain flour and 0.5 cup wholemeal flour.)

    The feijoa fruit itself gets a simliar 4 star rating from me: it's sweet and tangy and just has that hint of "different" kind of flavour to it, where you just can't put your finger down...

    I'll definitely make this again, if I get my hands on that many feijoas again!
