Finger Buns

  • 110 g raw sugar
  • 60 g Butter
  • 250 g warm water
  • 1 tablespoon dried yeast
  • 1 egg
  • 35 g milk powder
  • 500 g plain flour
  • 60 g sultanas
  • 1 egg yolk extra

Recipe's preparation

    Finger buns
  1.  

    Place raw sugar in bowl and mill for 4 seconds on speed 9.  Set aside

     

    Add butter and melt on for 2 minutes, 90 degrees speed 2

     

    Add warm water, 1 egg, dried yeast, milk powder, flour and milled sugar

     

    Mix for 5 seconds on speed 6 to bring dough together

     

    Knead for 1 minute 30 seconds, closed lid position, Interval setting

     

    Add sultanas and mix for 5- 10 seconds, reverse speed 4 using spatula to assist with incorporation if necessary.

     

    Oil Thermomat and wrap dough loosely in this and leave to rise until doubled in size (this will take 30 minutes to an hour depending on the time of year and how hot or cold it is).  Alternatively place in oiled bowl covered with glad wrap and again leave to rise. 

     

    Grease two large baking trays.  Preheat oven to 180 degrees C.  Knock the dough back and shape into long oval shapes.  Will make 12-16 depending on the size you want.

     

    Put on the baking trays about 5 cm apart.  Cover with plastic wrap and leave to rise for 20 minutes.

     

    Mix egg yolk with 2 teaspoons of water and brush over the buns.  Bake for 12-15 minutes or until golden.  Transfer to wire rack to cool

     

  2. Icing
  3. To make the icing melt the butter for 2 minutes, 90 degrees, speed 2.  Add icing sugar and 1 tablespoon of water and mix for 10 seconds on speed 5.  If necessary add a little more water and mix again until a spreadable icing is achieved.  Spread over the buns and allow to set.

Tip

Colour the icing with a few drops of your chosen food colouring or sprinkle some sprinkles on the icing before it sets.

    mine turned out badly... dense and cracks in them.  Not sure what I did wrong?  They didn't rise much either. Slathered with icing and the kids still liked them!

    Helps if you follow the instructions without any distractions!  Was in the middle of proving and got a phone call from an old acquaintance.  Totally missed the bit about proving for another 20 minutes and just read the 20 minutes.  Baked 'em just a little bit too long tmrc_emoticons.|  

    They still tasted ok, but I'll attempt it again!

    So delicious........ I didn't think these were going to work as the dough was super sticky to handle, but they turned out really well. just as nice without icing, perhaps even just plain icing sugar dusted over the top.

    Best tasting finger buns. Loved them, 20 month old loved them and husband will no doubt love them too. Thank you!(P.S. I changed the flour to spelt as husband can't have normal flour and they still turned out great. I did have to add a fair bit more spelt flour to the recipe but they are still so light and fluffy and totally delicious.)
