Fruit Filled Cereal Bars . . . HOWEZAT!

Ingredients

Fruit Filling

  • 300 grams berries of choice, frozen or fresh
  • 300 grams raw sugar

Dough

  • 100 grams Oats,rolled
  • 100 grams Processed Bran
  • 30 grams coconut flakes
  • 200 grams plain flour
  • 1 teaspoon baking powder
  • 100 grams raw sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • 120 grams Butter, cubed

Recipe's preparation

    Dough
  1. Add Oats, Bran and Coconut to the TM bowl.  Mill at speed 9 for 20 seconds.  Add Flour and Baking Powder mix on speed 6 for 5 seconds.  Set aside in a large bowl.

  2. Add Butter, Vanilla, Sugar and Egg to the TM bowl.  Cream, speed 5-6 for 30 seconds or until light.  Scrape side, then mix again speed 6 for 30 seconds.  Scrape sides.

  3. Start kneading the mixture, closed lid position and press the knead button Dough mode.  Slowly addd dry ingredients through hole in lid.  Knead for a further 30 seconds after all mixture has been added.  Mixture should stick together when squashed between your fingers.

  4. Lay down a piece of cling film.  Tip the mixture onto the bench and shape into a ball.  Twist the top and refrigerate for 1 hour.

  5. To  rinse the bowl.  Cover the blades with hot water, speed 9 for 5 seconds.  Empty bowl.

  6. Fruit Filling
  7. Note:  You will have filling left over, which you can use for jam or to make more cereal bars in the future.

    The berry mixture in the picture was frozen mixed berries.

  8. Add Berries and Sugar into the TM bowl.   Cook for 20 minutes at 100 degrees on speed 2.  Increase temperature to Varoma, remove MC and cook for a further 5 minutes, speed 2.  Pour the filling into a bowl and leave to cool.

  9. Assembling Bars
  10. Turn oven on to 170 degrees.  

  11. Roll out dough between baking paper.  Use a pizza cutter to cut rectangles (2cm x 4cm).  Place cooled set filling down one rectangle, away from the edge.  

  12. Place another rectangle ontop and push each side down to seal.  

    Place on a tray lined with baking paper and bake for 15-20 minutes.

    Wow!!! Never been a fan of shopped bought ones and these are awesome. Used apple instead of berries and only used 50g of raw sugar with a pinch of cinnamon and they are awesome. Even miss 2yo approves

    Made this today with a filling of fresh Apple and blueberries (300g). I only used 140g raw sugar for the filling. I will make it again but will try with only 100g of sugar for the filling as I found it still too sweet for our liking as the pastry is sweet as well. The family love this and will replace the toddlers fruit snack bars.

    I couldn't find any recipes around that I liked the sound of, so I've created my own.  The dough ingredients give the bars a really nice flavour.  I made the recipe as I was making up the bars last night (little bit of this and little bit of that tmrc_emoticons.) ) so I would appreciate your feedack.  

    I have tried the bars and they are yummy.  I haven't performed the ultimate kid test yet.  Stay tuned for the response . . .
